Introduction: The Chickwich
Time: 35 - 40 minutes (15-20 active)
This recipe will teach you how to make the Chickwich, a delicious twist on the classic chicken sandwich. Instead of bread holding chicken and other ingredients together, vegetables and other ingredients are placed inside a chicken breast.
The chickwich is very nutritious, as it cuts out the carbs from bread and is chock-full of protein. It's also cheap and easy to prepare. Lastly and most importantly, it's a delicious meal.
This recipe serves two.
Step 1: Ingredients
- Two large chicken breasts
- Two cherry tomatoes
- Two cups of raw spinach
- 1 1/2 cups of kale
- 3/4 cup of feta cheese
- Brown Sugar
- Salt and Pepper
- Olive Oil
- Garlic (optional)
Step 2: Prepare the Vegetables
Preheat the oven to 425 °F.
Roughly chop the spinach into pieces no larger than an inch across. Set it aside.
Slice the tomatoes once lengthwise. Then slice the resulting pieces crosswise into sections about 1/4 of an inch thick. Set them aside.
Separate the leafy part of the kale from the steps. Dispose of the stems. Roughly chop the kale.
Step 3: Roast the Kale
Heat a tablespoon of olive oil in a medium pan on high heat.
Once hot, add the kale to the pan. Let sit for 2 - 3 minutes.
Sprinkle brown sugar over the kale, mixing frequently. The amount of sugar is a matter of personal preference; I usually find 1 tablespoon plenty.
Roast for about 5 more minutes, stirring frequently, or until the kale is lightly browned and wilted.
Step 4: Add the Spinach
Add the cut spinach to the kale.
Stir frequently for about 2 minutes, or until the spinach is slightly wilted.
Move the pan off the heat.
Step 5: Cut the Chicken
Cut the fat off the chicken breasts.
Then cut the chicken breasts across their side, as shown above.
Warning! Don't cut the breasts all the way through!
Instead leave a flap so that the chickwich can stay together in the oven.
Step 6: Season the Chicken
Season inside and out with salt and pepper.
If you enjoy garlic, add garlic to the inside to of the breasts.
Optionally, you may spice the insides with any other spices you enjoy.
Most spice mixes meant for chicken will work well with the chickwich,
Step 7: Add the Other Ingredients
Spread the tomatoes out on the chicken.
Then add the kale and spinach.
Spread the feta cheese across the Chickwiches.
Step 8: Bake the Chickwich
Fold the Chickwiches up, trapping the ingredients within the chicken.
Place them on a baking sheet and put them on a rack in the middle of the oven.
Step 9: Remove From Oven
Bake the chickwiches for 18-20 minutes, or until baked through.
Then carefully remove from oven.
Step 10: (Optional) Roast Kale As a Side Dish
If you have kale left over, roast it in a pan with more olive oil. sugar and pepper while the Chickwich is in the oven.
Roast on medium-high for 9 to 11 minutes or until browned and crispy.
Serve as a fingerfood side to the Chickwich.
Step 11: Enjoy!
Serve the Chickwich with the browned kale as a side.
Garnish with more Feta if desired.
