Introduction: Tofu Taco Stuffed Shells
Taco stuffed shells are a quick and easy meal even for those who love tofu and those who are not tofu lovers. I was eating these for years before I realized they were not made of meat. This recipe is quick and easy and the kiddos like it too!
Step 1: Gather Your Ingredients
First, you need to gather the ingredients. My wife and I recently started using Amazon Fresh Free Trial and love it. You can get many of the ingredients delivered right to your front door! We cook for a big group so we typically double or triple the recipe.
1 - MorningStar Farms Meal Start ers Grillers Crumbles, 12 Ounce
1 & 1/2 teaspoon of Chili Powder
18-24 Jumbo Pasta Shells
1/4 teaspoon of salt
1 & 1/2 Cup Taco Sauce
1 - Cup of Shredded Cheese - taco style
2 cups of Tortilla Chips
Cooking Items Required / Suggestions
A pasta cooking pot - This is the 5 quart pot we use and love!
A saute pan - This is the one we use and love!
Glassware to cook the dish in the oven - Glass Baking Dish suggestion
Strainer or Colander
Step 2: Cook Your Pasta Shells
This is a good time to pre-heat your oven to 375.
Bring water to a rolling boil.
Cook the noodles for 10 to 12 minutes.
Drain the noodles using your strainer/colander.
Once the noodles are drained rinse them with cold water until they are cool to the touch.
Step 3: Prepare Your "taco" Meat
In your saute pan add a small amount of water and the Morningstar Grillers Crumblers. Over medium heat brown the crumblers. Turn off the heat and add in the cream cheese. Mix until all of the cream cheese is combined with the crumblers.
Add the Salt, Chili Powder and stir until fully mixed.
Step 4: Stuff the Shells With the "Taco Meat"
First, prepare your cooking glassware by spraying it with non-stick cooking spray.
Now its time to stuff the shells.
Taking the taco meat that you made in the skillet using a standard kitchen spoon fill the pasta shells.
Once you have finished filling all of the shells cover them with the shredded cheese. Break a few chips in your hand and sprinkle them over the top of the shells for extra crunch. Top with additional cheese and taco sauce to taste.
Cover the glassware filled with your taco stuffed shells with aluminum foil.
Step 5: Cook and Enjoy!
After covering your shells with aluminum foil place them in the oven at 375 degrees Fahrenheit for 35 minutes or until the cheese is fully melted.
Once the cheese is melted remove from the oven and allow the taco stuffed shells to cool for a few minutes before enjoying.
The taco stuffed shells keep pretty well too. If you have leftovers we refrigerate some to reheat in the next few days and freeze any we won't be eating in the next few days
