Introduction: Tomato and Basil Bread Pudding

This bread pudding stars caramelized onions, fresh tomatoes and cheese.

  • Ciabatta bread
  • Olive Oil
  • Shallot Onion
  • Garlic
  • Cherry tomatoes
  • Kosher salt
  • Ground black pepper
  • Fresh basil
  • Grated romano cheese
  • Whole milk
  • Eggs
  • Garlic powder
  • Onion powder
  • Butter

Step 1:

Cut the ciabatta bread in cubes

Step 2:

Cut the shallot onion into thin slices

Step 3:

Chop the garlic cloves

Step 4:

Cut the tomatoes in half

Step 5:

Chop the basil in small pieces

Step 6:

Preheat the oven to 190ª C.

Step 7:

Grease the glass baking dish with butter.

Step 8:

Place bread cubes in the dish

Step 9:

Heat olive oil in a large skillet over medium-high heat.

Step 10:

Add shallot and garlic and cook, stirring constantly, until fragrant, about 1 minute.

Step 11:

Add tomatoes and season with salt and pepper.

Step 12:

Cook until tomatoes have softened slightly, about 2 minutes.

Step 13:

Remove from the heat and stir in basil.

Step 14:

Pour the entire tomato mixture over the bread.

Step 15:

Sprinkle Romano cheese over top, then stir until well combined.

Step 16:

Beat milk, eggs, salt, pepper, garlic powder, and onion powder together for custard in a large bowl until smooth.

Step 17:

Pour over the bread mixture and gently toss to coat.

Step 18:

Bake on the center rack of the preheated oven until slightly puffed and golden, 24 to 30 minutes

Step 19:

Remove from the oven and let cool for 5 minutes.

Step 20:

Cut into wedges and serve.
