What's so cool about this meal is that you can eat that yummy diner taste to breakfast or throw it into a burrito for on the go eating.  Breakfast for two is done in 15 minutes!

Step 1: Ingredients

- 2 large eggs
- About 5 slices of ham/turkey/cooked bacon/or cooked sausage (Any meat available or omit).
- Half a large potato
- Vegetable/Canola oil
- Seasoned salt
- Pepper

Step 2: Whisked! Chopped!

Crack two eggs into a bowl.  Whisk until combined.  Tear up 5 slices of ham/turkey (if adding meat) and add to the bowl, give it another good whisk to combine.  Set aside.

If you're not a fan of eating potato skin, peel it.  I don't mind it, I just scrub the potato under water until it's nice and clean.  Cut the potato lengthwise.  Place the potato flat side down on your cutting board and slice into strips.  Rotate the strips counter clockwise and cut to make cubes.  Cube the other half of potato and put it into a container of water and refrigerate.  You can use this extra potato the next day.

Step 3: Fry and Cover

Turn your stove to medium heat.   Add just enough oil to coat the bottom and let it heat up.  Once the oil is warm add your potatoes.  Sprinkle seasoned salt and pepper.  Cup a handful of water and sprinkle that over your potatoes.  Cover the taters up with a lid or in my case, a round cake pan.  Make sure your heat is on medium and set the timer for 7 minutes.

Step 4: It's Been Egged

Okay 7 minutes have passed, carefully with an oven mitt, remove the lid.  Stir your potatoes.  They should have a nice golden bottom with a soft center.  Perfect!  Add your egg/ham mixture.  Let the egg set for about 5 seconds then begin to stir.  When the eggs are just about done, add some cheese (however much you want) and stir to melt.  

Serve hot on a plate, wrapped into a flour tortilla, or in between two slices of toast.  You can add green chiles or jalapeños for a spicier flavor, or bellpeppers for crunch.  The flavor combinations are endless!  Happy Eating!
