Introduction: Tostada Chips

When I was in California my favourite Mexican food was a good tostada, but when I returned home I couldn't find them anywhere so I made my own. Tostadas were a lot of work, so eventually I made tostada chips! Tostada toppings on a tray of corn chips, a delicious recipe that can be made in 20min!

This recipe is 100% vegetarian, but if you prefer something like beef instead of beans feel free to modify the recipe accordingly.

Step 1: Collect Your Ingredients

To make tostada chips you will need:

  • Beans (any type works, 1 can)
  • cilantro (2 handfulls)
  • canned green chillies (1 can)
  • tomatoes (3 or 4)
  • grated cheese (enough to cover the chips)
  • avocado (2 medium)
  • lettuce (a few leaves)
  • tortilla chips (half a bag)
  • onions (half of a small one)
  • Lime juice (about a lime's worth)

The quantities aren't too precise, so don't worry if you don't have enough of something.

Step 2: Cooking

For the cooking part of tostada chips all you need to do is preheat the oven to 350 degrees Fahrenheit. Then, while the oven is preheating spread the corn chips out on a tray evenly, evenly spread the beans over the corn chips and sprinkle the cheese (grated) all over the whole tray.

Once the oven is pre-heated, place the baking sheet in the oven until the cheese is melted.

Step 3: Make Salsa!

To make salsa, start by blending together your cilantro and your onion in a food processor. Then, add the the tomato and blend until you have a chunky salsa consistency. Once that is done, add a bit of salt to taste, and if you would like, add a little bit of lime juice.

Step 4: Make Guacamole!

To make guacamole all you need to do is add your avocado to a bowl with a scoop of your homemade salsa, and mush it all together!

Step 5: Put Toppings on Your Chips!

By now your cheese is definitely melted, so it is time to decorate your chips! I generally evenly sprinkle my canned green chillies around the tray, and then I cover everything with a nice handful of fresh lettuce. I prefer to serve the guacamole and the salsa on the side because if I put it all on top, my chips will go soggy! However, this is your meal, so do whatever you want!

Step 6: Serve!

Once your chips are decorated, it is time to serve! I generally serve the chips with my guacamole and salsa separate, but you can do whatever you want!
