Intro: 10 Minute Vegan Egg Salad

Easy vegan "Egg Salad" with chickpeas, really tastes like eggs!

that simple and vegen egg salad. Things you need for that recipe:

  • 240gr cooked chickpeas,
  • 1tsp sugar
  • 2/3tsp salt
  • 2/3tsp kala namak (black salt)
  • 2tsp parsley
  • 2 pinches of pepper
  • 1/2tsp turmeric
  • 1/2 half of a small onion
  • 7tbsp plain soy yogurt
  • 1 ripe avocado (not too soft)
  • 2tbsp vegetable oil
  • 1/2tsp turmeric

Chop the cooked chickpeas a little bit and also squash them a bit.

Put them into a bowl. Mince the 1/2 onion and add it to the chickpeas.

Add the seasonings, soy yogurt and oil. Cut the avocado in half

and remove the shell. Chop into small (not too small!) pieces and

add them to the other stuff in the bowl. Mix everything well for 3-4

minutes. You can eat it immediately but i prefer to let it rest at least 10 minutes.
