• 5 black peppercorns

• 5 allspice berries

• 3 garlic cloves

• 2 black currant leaves

• 1/5 horseradish leaf

• 1 dill flower head

• 1 tbsp sugar

• 1 tbsp salt

• boiling water

• vinegar (for blanching only)
