Introduction: Watermelon Cake Pops

I prepared Watermelon cake using watermelon juice, the instructable for which i have updated as a separate entry. And using the same Watermelon cake, i prepared these most delicious cake pops that i have ever had. The star ofcourse is the juicy, moist, frangrant and flavour packed Watermelon cake. I really really hope you try the Watermelon cake and pops. They are delicious and you will love it :)

Step 1: Ingredients Required for Preparing Cake

  • Cake flour - 1 cup + 6 tbsp
  • Baking powder - 2 tsp
  • Salt - 1/3 tsp
  • Egg - 2 (Room temperature)
  • Sugar - 1/2 cup + 4 tbsp
  • Softened Butter - 6 tbsp
  • Watermelon juice - 1/2 cup
  • Vanilla extract - 1/2 tsp
  • Small semi-sweet chocolate chips - 1/3 cup
  • Red food color - As required

Step 2: Method to Prepare Cake

  • Preheat oven to 350 F
  • Grease bottom and sides of 9inch cake pan
  • Cut the watermelon pieces, grind it well in a mixer, strain the juice to remove the pulp and measure out 1/2 cup and keep aside
  • Sift cake flour, baking powder and salt and keep aside
  • In a large bowl, beat eggs till very foamy and keep aside
  • Beat butter and sugar and cream together until light and fluffy.
  • Add sifted ingredients alternately with watermelon juice, a small amount at a time, beating after each addition until smooth
  • Add in vanilla extract and red food color and beat well .
  • Add the beaten egg and chocolate chips and fold gently with spatula until thoroughly combined
  • Bake for 27 to 32 minutes. Cool cake in pan 10 minutes, then remove from pan and transfer to a wire rack to finish cooling.

Step 3: Ingredients Required to Prepare Cake Balls

  • Watermelon Cake - 2 big slices
  • White chocolate chips - 1/4 cup

  • Cream - 1 tbsp

Step 4: Method to Prepare Cake Balls

  • Once cake is completely cool, crumble it well to get a fine mixture and keep aside
  • In a microwave safe bowl add White chocolate chips and cream and microwave for 1 minute - mix well - again microwave for 1 minute and mix well - repeat this process until the chips are completely dissolved

  • Add this liquid mixture into the crumbled cake and mix well and make small balls out of it

  • Cover and place the cake balls in the fridge for 1-2 hrs to firm up

Step 5: Ingredients Required to Prepare Watermelon Cake Pops

  • Cake balls - 8
  • White Candy melts - 1/2 cup

  • Green Candy melts - 1/2 cup

  • Vegetable shortening - 2 tbsp

  • Candy stick - 8

Alternatively we can also use white chocolate chips and green food color to make the rind of watermelon instead of candy melts. I tried both and i recommend candy melts as they are easier to work with.

Step 6: Method to Prepare Watermelon Cake Pops

  • In a double boiler add vegetable shortening (1tbsp) and let it melt - add white candy melts and switch off the burner - mix well till the candy melts completely
  • Hold the candy stick and roll just a little in the melted candy melt and push it inside the cake ball and hold for 5 seconds and do the same for all the cake balls and keep in fridge for 5 minutes so the stick holds on to the cake balls

  • Hold the candy stick and roll the cake ball in the melted candy melt till completely coated and push inside half cut watermelon - do the same for all cake balls and keep in fridge for 5 minutes

  • In a double boiler, add Vegetable shortening ( 1tbsp) and let it melt - add green candy melts and switch off the burner - mix well till the candy, melts completely

  • Hold the candy stick and roll the cake ball in the melted candy melt till completely coated and place on half cut watermelon - do the same for all cake balls and keep in fridge for 5 minutes

  • With the help of a toothpick make lines on the cake pops using light green candy melts to resemble a watermelon
