Introduction: White Chicken/Turkey Chili

Last thanksgiving my family and I had so much leftover turkey, we didn't know what to do with it. So, I came up with the idea of using turkey instead of chicken for white chicken chili, everyone loved it and it used up a lot of our turkey, so it was a win win! Don't get me wrong, the original is really good too, I've just grown to love this way a little more, and I hope you do too!

Serves around 8-10 people.

Cook time: 1 hour.

Supplies

2 32oz containers of chicken broth plus one 15oz can of chicken broth. Make sure you use one 32oz container low sodium

8oz container of cream cheese or 8oz of container of sour cream

2 1/2 cups of rotisserie chicken, cooked, shredded turkey, or 1 pound of raw diced chicken

2 15oz cans of white beans, drained and rinsed

1 4oz can of green chilis

1 1/2 cups of any kind of pasta, or 1 cup of rice

1/2 a cup of fresh cilantro [ if you're not found of cilantro, you can use 1/4 a cup. ]

2 tbsp of avocado oil or canola oil

2 tbsp of fresh minced garlic

1 1/2 cups of canned or frozen corn

2 tbsp of lime juice


*** Spices:


1/2 a tsp of cayenne pepper [ if you want a spicier chili use 1 tsp of cayenne pepper instead of 1/2 a tsp. ]

1 1/2 tsp of oregano

1 1/2 tbsp of dried parsley or 1/8 cup of fresh parsley

A dash of sage

2 1/2-3 tbsp of cumin

1/2 tsp of paprika

2 tbsp of dried minced onion

Salt and pepper to taste


*** Tools:

Large pot

Ladle

Spoon

Stove

Step 1: Getting Stuff Ready

Add all the broth [ even the 15oz can ], corn, beans, garlic, green chilis, and the fresh cilantro.

Give it a good stir and let simmer for 5 minutes.

Step 2: Adding the Spices

If you're using raw chicken, you can put that in now.

Add all the spices, oil, and then stir.

Let it simmer for 5 minutes.

Step 3: Adding the Cream

Put the cream cheese or sour cream in and stir until all the big chunks are broken up.

Leave it on simmer for 20 minutes, stirring occasionally.

Step 4: Adding the Pasta/rice. Is Your Kitchen Smelling Great Yet?

Add the pasta/rice and if you're using the turkey or rotisserie chicken you can add that in as well.

Simmer for 25 minutes, stirring occasionally.

Step 5: Adding the Lime Juice

Add the lime juice and stir.

Leave on simmer for 5 more minutes.

Step 6: Yum!

Get out some bowls and serve!

I found this to be a great dish to serve at a potluck.
