Introduction: Wonderful Banana Split Ice Cream Pie
First let me say, this recipe is a delicious medley of all your favorite sundae flavors.
This recipe reminds me of a kindergarten art project - it's really really fun, really easy, sorta messy, and just a little time consuming. It's more an outlet for your creative energy than one particular pie. You can substitute ingredients with their ready-made counterparts with no effect on the end result. We made a 1-2-3 cookie crust, but you can make (or buy) any type, graham cracker, chocolate, regular. This pie will go well with all of them.
Let's begin, shall we?
Step 1: Ingredients
Pie crust
1 stick of butter
1 egg
1/4 cup sugar
1 1/2 cups flour
1 tsp vanilla
Filling
2 medium size bananas
1 quart Neapolitan ice cream
1 bag chocolate chips
1 20 oz. can of pineapple in its own juices, not heavy syrup
1 carton strawberries
1 pint whipping cream
toppings
Step 2: Make the Crust (if You Are)
Soften the butter
Cream together the butter, sugar, and vanilla
Add the egg
Blend until smooth
Add the flour all at once
Mix on a low speed until just blended
Form into a ball
Wrap in plastic wrap.
An airtight container will work too. That's what we used.
Refrigerate for at least an hour.
Preheat the oven to 325° F
Roll out crust between two sheets of parchment paper.
Take off the top parchment paper.
Put your hands under the bottom paper, pick it up, with the crust on it, and flip it onto the pie plate.
Smooth the crust into the pie plate and trim around the edge.
Bake for 10 minutes.
Let it cool.
Step 3: Layering the Filling
Drain the Pineapple, reserving the juices
Slice the Bananas
Coat them in the reserved pineapple juices (to prevent discoloration)
Layer the bananas in the pie crust
Using your hands press the chocolate ice cream over the bananas
(it gets pretty cold, so we had to take a quick break and run our hand under hot water :)
We used chocolate first because we're masochistic and decided we absolutely HAD to have the middle flavor first. I guess.
Sprinkle the chocolate chips on top of the ice cream
We saved some to sprinkle on top.
If you need to, you can put it in the freezer in between layering to set.
Using the same method you used for the chocolate, layer the vanilla ice cream on top of the chocolate chips.
Layer the pineapple on top of the vanilla ice cream.
Same method for the strawberry ice cream.
Put in the freezer for about an hour or so to set, or until your almost ready to serve it.
Take out the pie and, if your freezer's really cold, you will probably want to let it sit out for ten or twenty minutes to soften so you can cut it.
While it's sitting (either, in the freezer or on the counter), husk and slice the strawberries and layer them on top of the ice cream (I suppose if you want your strawberries frozen you can put them on before you stick the pie in the freezer)
Whip up the cream with 1 tsp vanilla and 1 tbsp sugar (or use ready to use whipping cream) and put it on top of the strawberries.
Now for the really fun part.
TOPPINGS!
You can pretty much put whatever you want on top. We put chopped nuts and the leftover chocolate chips, but you could put pretty much anything you can think of! (Of course the best are sundae toppings.)
Step 4: One Last Note
This is not a strict recipe. You can pretty much use anything you can think of.
For example:
Fudge sauce on top of the chocolate ice cream
Marshmallows (or marshmallow creme) on top of the vanilla
A different flavor ice cream in between layers
...you get the idea.
If there's something in the recipe that you don't really fancy, feel free to substitute it. It'll still taste delicious!
Be as creative as your imagination will let you and enjoy!
