Introduction: Zucchini Fritters With Yogurt Sauce

This is a delicious side dish that combines a cheesy zucchini patty with a zippy sauce to create a delightful snack that you and your family or guests will love.

Step 1: Let's Make Some Yummy Zucchini Fritters With Yogurt Sauce

And here's the recipe for the fritters:

2 zucchinis

1 tsp salt

4 scallions, chopped

1/4 cup parsley, chopped

1/2 tsp dill

1 egg, beaten

3/4 cup parmesan cheese (I got the fancy kind)

1/4 cup flour

Shred the zucchini, throw some salt on it, and let it sit for 10 minutes. Meanwhile, chop the scallions, chop the parsley, don't spill the dill, beat the egg, measure the fancy cheese, and measure the flour.

Step 2: Combine Your Fritter Ingredients

After squeezing the liquid from the zucchini, you'll combine all the fritter ingredients, and stir well, until you have a mushy mess.

Step 3: Cook Your Fritters

Coat a frying pan with olive oil, roll your fritters up into little cookie size balls, and place them in the pan. Flatten them well with a spatula, and let cook for 4 minutes on each side. It smells like cheese at this point. So yummeh.

Once browned on each side, remove from heat and place on a paper towel. They are not at all greasy at this point. They should be somewhat firm and crispy on the outside.

Step 4: Start Preparing the Garlic Herb Yogurt Sauce

Garlic Herb Yogurt Sauce


½ cup plain Greek or regular yogurt

2 tsp chopped parsley

1 T chopped fresh mint

2 T fresh lemon juice

1 T olive oil

1 tsp honey

1 tsp teaspoon minced garlic

Combine all ingredients in a bowl, and stir.

Step 5: Eat
