Introduction: Chili Recipe

This is a really quick and flavorful chili recipe - very little simmering time required! While I really love a vinegar-tomato-and-spice chili, this chili recipe is good when you want something a little different - it's spicy, smoky and sweet. The combination of chipotle peppers and corn is fantastic.

Step 1: Ingredients

  • 1 pound ground beef
  • 3 cups black beans you've cooked yourself (or 2 14.5 oz cans)
  • 1 14.5 oz can diced/crushed tomatoes
  • 2 cloves garlic, minced
  • 3/4 diced red onion (the other 1/4 chop up but 
  • 1/2-1 cup fresh or frozen corn
  • 4 chipotle peppers, minced, plus some of the adobo sauce
  • a pinch or two of cumin
  • 1/2 tablespoon chili powder or to taste
  • salt to taste
  • water or stock, if needed
You don't want to add in all the liquid from the black beans - I would only recommend putting in a cup or so.

Step 2: Cook Onions, Garlic and Beef

Put a little oil in a pan over medium heat and cook it until it softens. Then add in your ground beef and garlic. Break it up into small chunks as it cooks. Cook it only until just done and then hurry on to the next step - don't cook it to death here. :D

Step 3: Add in the Chipotle, Beans and Tomatoes

Chop up four chipotle peppers and add them along with two good spoonfuls of the adobo sauce. Mix well.

Pour in the beans (along with a cup of liquid) and the tomatoes and their juices. Mix again. :D

At this point, you can add up to 1/2 cup more liquid if you think it needs it!

Step 4: Add Spices and Simmer

At this point, add it 1/2 tablespoon of chili powder and a pinch or two of cumin. Stir that in and cover.

Simmer for 10-15 minutes.

Step 5: Add the Corn and Check for Seasoning

Turn off the heat and dump in your corn. Stir it in and then taste test - at this point you might want to add a little salt. :D

Step 6: Serve!

Enjoy! It's really good with red onion and cilantro on top, or with chips, cheese and sour cream. :D
