won ton are delicious, easy to be made at home in a wide variety of fillings and preparations.

here i will show you how you can make classic porc won ton and 2 different ways to prepare them

fried with a chilli dip sauce, crispy on the outside, soft and tasty on the inside. perfect as an appetizer for any (chinese) meal.

or as won ton noodle soup with vegetables - makes a good dish for a cold spring day!

i can't decide which version i like better, they are just both so good!

Step 1: Ingredients

for the won ton:

- 1 package of frozen won ton leaves (you could also make them yourself, but the frozen ones are nice and so much less work)
- 200 g of ground pork
- 1 garlic clove
- slice of ginger, about 2 cm long
- chives
- 1 teaspoon sesame oil (forgot it on the picture)
- 1 teaspoon rice wine / sake
- 1 egg
- salt & pepper

if you'll going to make the fried won ton you will also need:

- neutral oil for frying

  for the chilli dip sauce:
- 1 tablespoon dark soy sauce
- 1 tablespoon chilli oil
- 1 tablespoon rice vinegar or neutral wine vinegar if you have no rice vinegar
- 1 teaspoon freshly ground sichuan pepper
- 1 small peeled and chopped garlic clove
- some chopped chives

if you'll going to make the won ton noodle soup you will also need:

- chicken or vegetable broth (instant or homemade)
- thin chinese noodles
- 1 carrot
- a handfull of fresh spinach leaves
- sesame oil
- some chopped chives

Step 2: The Filling

first, defreeze the won ton leaves.

peel garlic and ginger, then chop them finely. chop the chives as well.

now simply mix all the won ton ingredients (except won ton leaves) in a bowl, salt and pepper to taste.

Step 3: Making the Won Ton

take one won ton leaf, put one ball of filling in the middle. you will only need a little filling for each won ton, a piece of filling a little bigger than a big hazelnut.

brush the edges with cold water, then fold the leaf over 2 times diagonally.

continue with the rest of the won ton.

Step 4: Serving Method 1: Fried Won Ton With a Chilli Dip Sauce

now you have to decide if you want to fry your won ton or rather have them as a soup.

if you decide to fry them, heat about 2 cm of oil in a frying pan or a wok (if available). the oil is hot enough when little bubbles form on a wooden cooking spoon put into th oil.

only fry a little portion of won ton at a time!

once they are golden brown on one side turn them around and fry the other side.

frying takes only about 2 min per side. put the fried won ton on kitchen towels to drain some of the oil.

for the chilli dip sauce stir together the soy sauce, vinegar, chili oil, garlic, sichuan pepper and chives.

enjoy! (best if they're still warm) OR...

Step 5: Serving Method 2: Won Ton Noodle Soup

... if you don't like frying, make a delicious won ton noodle soup:

cut the carrot into very thin juliette stripes, chop the chives (again...) and cut away the stem of the spinach leaves.

in a pot, bring the broth to a boil. you will need at least on liter of broth.

put the won ton into the boiling broth and boil for about 6 minutes, then take them out with a slotted spoon and divide them up into bowls.

now put the carrotts into the still boiling broth and one minute later the noodles, after one more minute put the noodles and the carrots also in the bowls, then the raw spinach leaves. pour the hot broth into the bowls until full - the spinach leaves will be cooked by the still hot broth.

sprinkle generously with the chives, salt & pepper to taste.

enjoy!
