Introduction: 20 Minute Special Eggs

This is an egg dish that my Husband's Grandmother made for him when he was a kid. We've been married 19 years and I have only "gotten it right" in the last 10 years. This is not to say you won't make it right. You don't have my husband to critique you. :)

Anyway...this is really good and quick. I make it another way that is "fancier" but takes longer. I'll add that at the end of this.

Step 1: Ingredients

1 bag Tater Tots

1 lb turkey sausage, thawed if frozen - you can use whatever sausage you like.

6 eggs

Olive oil

Salt & Pepper

Shredded cheese, salsa (optional)

Step 2: Cook....

Have your pan already hot. Add in roughly 1 tablespoon oil.

Add the sausage and cook until no longer pink. 5 mins.

Add the tots, about 3/4 of the bag and about 1 cup of water. Enough to cover the sausage but not the tots.

Cover and cook for 10 mins.

Step 3: Cooking.....

After about 10 mins take the lid off and spread out the potatoes. Most of them should fall apart by now. Mix it all together and put the lid back on for another 5 mins.

*This dish does stick to the bottom of the pan because of the starch in the potatoes. You can try and add more oil or a non stick pan. The sticking does not effect the outcome or taste.

Step 4: Cooking....

Now that it's cooked for about 15 mins, take the lid off and add the eggs. Spread them around to cover everything and get in all the nooks and crannies.

Put the lid back on and cook for 5 mins.

Step 5: Eat....

The eggs will puff up. Don't freak out they are done. Just mix it all together and serve.

You can top with cheese and salsa or whatever you like on your Special Eggs!

Step 6: The "fancy" Way

Ingredients -

3-4 med sized potatoes

1 lb turkey sausage

6 eggs

Cheese

Directions -

Pre-heat the oven to 375. Using an oven safe pan for this.

Peel and dice the potatoes. I small dice will help them cook faster. In a saucepan par boil the potatoes until they are just starting to get soft. Drain.

Cook the sausage until no longer pink. Then add the potatoes, season with salt and pepper. Add the eggs, cover and put the whole thing in the oven.

Bake for about 15 mins or until the eggs are puffy and the potatoes are done. Remove from the oven.

Turn on the broiler. Do not move the rack up in your oven.

Mix the dish all together and cover with shredded cheese. (you don't have to use shredded, slices work too)

Broil uncovered until the cheese is melted and whatever isn't covered in cheese is crispy.

Remove and serve.

*Caution - the handle of your pan will be hot.
