Introduction: Apple Cobbler

This, and it's cousin, peach cobbler are go-to comfort foods for myself and my family. This recipe has been adapted from the 1972 edition of the Better Homes & Gardens cookbook. This is one of the very first cookbooks I ever used, and it belonged to my mother. There are many recipes in this one book that tug at my heartstrings and bring the past rushing back. Mom has been gone for some time now, but this bit of homemade comfort will continue to warm our hearts.

Ingredients

For Filling:

  • 6 cups apples, peeled and sliced
  • ½ cup granulated sugar
  • 2 tablespoons flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg

For Biscuit Topping:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup butter
  • ¼ cup milk
  • 1 egg, slightly beaten
  • Sugar in the Raw to sprinkle on top (optional)

Step 1: Filling

  1. Slice or chop the apples however you like, just be sure they're uniform in size so they cook evenly. [ If you're using a mandoline as I am in the photo, PLEASE use the finger guard! I use mine and I only popped it off for the picture.]
  2. Combine dry ingredients well, then toss with apples.
  3. Cook and stir over medium heat in an 8 -10 inch cast iron skillet until the apples are almost tender; about seven minutes.

Step 2: Biscuit Topping

  1. Sift together all dry ingredients but the raw sugar.
  2. Cut in the butter until the mixture looks like coarse crumbs.
  3. Mix the egg and milk then pour it into the dry ingredients all at once.
  4. Mix until combined then drop spoonfuls on the hot apple filling.
  5. Sprinkle biscuit topping with raw sugar.

Step 3: Bake & Serve

Bake at 400 for 20 minutes.

Serve warm or room temperature.
