Introduction: Bacon Avocado Breakfast Toast

Hey y'all,

In this instructable I'll teach you how to make an awesome Avocado Breakfast Toast. The best part about it is that it can be eaten at anytime of the day not just breakfast. I love avocado and I love bread. In this recipe I used my own homemade sour dough bread which enhances the flavor! Follow the step by step guid below or watch the video tutorial here:

Step 1: Ingredients

  • 2 Slices of Bread (I used my homemade sourdough)
  • 1 Medium size Avocado
  • Bacon (that has been cooked to perfection and broken up in small chunks)
  • Salt and Pepper (to your taste)
  • ¼ of a Red Onion (optional)
  • 1 medium sized Tomato (optional)

Step 2: Prepare and Bake the Bacon

Place bacon on a cookie sheet, I have an oven safe silicon liner, if you dont have that you can use aluminum foil or a cookie rack. Place the bacon in the oven and bake at 375 F for 15-20 minutes depending on your desired level of crispness. The time can change depending on how much bacon you use so keep an eye out.

Step 3: Toast the Bread

Toast your bread slices to your liking. I use my oven to toast the bread but any method will work.

Step 4: Slice Veggies

While the bacon is baking, go ahead and prepare all the veggies by slicing them in small chunks. Be sure to make them small enough to overtake the taste of the avocado in each bite once you get to mixing everything together.

Step 5: The Avocado

Clean the avocado of the skin and pit and place the flesh in a small bowl. Add salt and pepper to taste and mush up the avocado (add sliced onion and tomato if desire). Essentially you are going to make a small guacamole that can be spread over the toast.

Step 6: Combine the Ingredients

Combine everything together and make a nice mushed avocado spread. Store it in a small bowl for later.

Step 7: Allow Bacon to Cool and Chop

Once you remove the bacon from the oven, let it cool a bit. This allows it to crisp a bit more and will be easier to chop in small chunks. At this point you can either proceed to chop it in bits or leave it full. I chop the bacon because I prefer the small bits as part of the avocado spread but you can place the full slice of bacon right on top if you prefer.

Step 8: Spread Avocado and Top With Bacon

Once your toast is cooled, top it with the avocado and sprinkle the top with your bacon. Slice the toast in half for a prettier presentation and a more comfortable experience handling :)
