In this Instructable, I will show you how to make coconut bread. If you like coconut, you will love this easy coconut bread recipe. It is so delicious! Coconut bread is a quick bread like banana bread and zucchini bread. If I can do it you can do it, let's get baking! :)

Step 1: Ingredients and Tools

Ingredients:

  • 4 large eggs
  • 1 cup softened butter (225 g)
  • 2 cups white granulated sugar (400 g)
  • 1 Tbsp. of coconut extract/flavoring (15 ml)
  • 1 cup buttermilk (250 ml)
  • 1 cup coconut flakes (unsweetened or sweetened) (75g)
  • 3 cups all-purpose (plain) flour (360 g)
  • 1/2 tsp. salt (3 g)
  • 1/2 tsp. baking soda (3 g)
  • 1/2 tsp. baking powder (2 g)

Glaze:

  • 1 1/2 cups white granulated sugar (300 g)
  • 3 Tbsp. unsalted butter (42 g)
  • 1/3 cup water (80 ml)
  • 1 tsp. coconut extract/flavoring (5 ml)

Tools:

  • 2 - 5x9 bread loaf pans or 6 to 8 mini bread pans 3.75x6
  • Bowls
  • spatula
  • hand mixer
  • shortening or kitchen spray
  • parchment paper for the bottom of pans
  • wire rack
  • pot
  • wooden skewer

Step 2: Cream Wet Ingredients and Coconut Together

Begin by preheating the oven to 325 F or 162 C. In a large bowl cream together the eggs with the butter, sugar, coconut flavoring, buttermilk, and coconut flakes with a mixer. Scrape the sides of the bowl with a spatula as needed.

Step 3: Finish the Batter With the Dry Ingredients

In a separate bowl whisk together the flour, baking powder, baking soda, and salt. Then add it about a third at a time to the batter and mix it in. Repeat until it is all incorporated, again scraping the sides of the bowl with a spatula as necessary.

Step 4: Bake That Coconut Bread

Prepare two 5x9 bread pans for 6 to 8 mini loaf pans with shortening or kitchen spray. I also like to put parchment paper on the bottom of the pans sometimes. You can also flour the pans after greasing them. Pour the batter evenly across all the pans. Bake in the oven for 55 to 60 minutes until a toothpick comes out clean. If you are using smaller pans it will take less time, check them at 40 minutes.

Step 5: Make the Hot Glaze

When you have about 10 minutes left before the bread is done baking, prepare the hot glaze. In a saucepot add the water, coconut flavoring, sugar, and butter. Set the burner to medium-low to medium heat. Then stir and allow the mixture to bubble/boil. This will ensure the sugar dissolves properly.

Step 6: Pour on the Hot Glaze

Once the bread comes out of the oven it will be nice and golden brown on the top. Poke holes in it with a wooden skewer. This will allow the glaze to seep down into the bread. Then spoon the hot glaze on top until it covers the whole bread. Allow the bread to cool for 10 minutes.

Step 7: Slice and Serve

After the coconut bread has cooled a bit, use a cake spatula or butter knife and run it along the edges of the pan to help loosen the bread. Then place it on a wire rack to cool the rest of the way. Once done slice it up and serve as is or with butter. Enjoy!
