Introduction: Frosted Carrot Cake Blondies Recipe

If you love blondies and carrot cake I have the perfect marriage of the two... Frosted Carrot Cake Blondies! Yup, they are also frosted with cream cheese frosting! These Carrot Cake Blondies are sweet, caramelized, soft and the frosting is just perfection. I've even added pecans to this recipe and you can add dried fruit such as raisins (I didn't). Supplies

Step 1: Ingredients

For the Blondies

  • 8 ounces unsalted butter, melted
  • 1 ½ cups (302 g) brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg (room temperature)
  • 1 egg yolk (room temperature)
  • 1 cup carrots (340 g), finely grated
  • 1 ½ cups plus 2 tablespoons (255 g) all-purpose flour
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup (60 g) chopped pecans

Cream Cheese Frosting

  • 4 ounces unsalted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • 1 teaspoon vanilla
  • 2 cups confectioners (260 g) sugar
  • ½ cup (60 g) chopped pecans

Step 2: For the Blondies

Preheat oven to 350 degrees F (177 C). Line a 9x9" inch baking pan with parchment paper and lightly spray with non-stick baking spray.

Step 3: Beat Butter, Brown Sugar and Vanilla

In a large bowl add the melted butter, brown sugar, and vanilla and combined until smooth.

Step 4: Add in Egg and Egg Yolk

Beat in the egg and egg yolk

Step 5: Add in Shredded Carrots

Fold in the carrots. Make sure your carrots are finely shredded, you dont want big chunks of them running thought out your blondies.

Step 6: Whisk Dry Ingredients

In a medium bowl add in the flour, ginger, cinnamon, and salt and whisk to combine.

Step 7: Add Dry to Wet

Fold in the dry ingredients to the wet ingredients to combined.

Step 8: Add in Pecans

Stir in chopped pecans. Your batter should smell incredible because of the spices.

Step 9: Pour Into Baking Dish

Pour batter into prepared pan, smooth the top.

Step 10: Bake and Cool Blondies

Place pan in the oven and bake for 30-35 minutes or until the center is firm. Cool blondies completely!

Step 11: For the Frosting

Frosting In a large bowl beat the cream cheese butter and vanilla and beat on medium speed until smooth.

Step 12: Add Confectioners Sugar

Slowly add in the confectioners sugar, one cup at a time and beat until smooth.

Step 13: Frost Blondies

Frost cooled bars by simply scooping the frosting onto the blondies and smoothing it evenly across the top. Sprinkle with pecans. Cut and serve.
