Not sure if this is more funnel cake or fried dough, or what the difference is. But I imagine those who can't eat gluten have a hard time finding an adequate substitute. Frying stuff can be messy and overwhelming, but it doesn't have to be. And not everything that is usually deep fried, has to be deep fried. Keep in mind that because this recipe isn't deep friend, the dough isn't necessarily going to look the same as it would but the taste is pretty spot on.

Step 1: Ingredients

2 cups all purpose gluten free flour

1 tsp baking soda

3/4 tsp sea salt

3/4 cup warm water

2 tbs cold butter, cut in chunks- or crisco/coconut oil

Frying pan

Oil for frying

Tongs

Topping- fruit, syrup, honey, confectioners sugar, etc.

Step 2: Mix

Mix flour, salt and baking soda together. Mix in the cold butter using a pastry blender, food processor, or your hands. Add in the warm water and combine to form a dough. Cover and let rest 15-30 minutes.

*For a sweeter dough, add 1-2 tablespoons of sugar into the mix.

Step 3: Divide

Divide the dough into equal sized pieces and then flatten them to make rounded discs. You just need the discs to be big enough to fit inside your frying pan. Set aside.

Step 4: Fry

Heat up a frying pan and then add enough oil to approximate 1/4-1/2". You don't need a ton. One by one add a disc to the frying pan for about a minute and then flip over and repeat. Remove disc from the pan and let rest on paper towel (this will help soak up the oil).

Step 5: Top and Enjoy

Eat these while they're still warm. Top with confectioners sugar, fruit, honey, syrup, whatever you want.
