In this instructable I will show you how to make Twinkies. This homemade Twinkie recipe is easy to make. This is not a new idea or recipe, it was made popular by Todd Wilbur several years ago. Growing up we had a Hostess Bakery store about a mile away from our house. I remember going there with my mom and I was a kid in a bakery store...lol. Rows and rows of breads, pastries, and oh yes Twinkies! It was a sad day when that store closed down. This clone or copycat recipe for Twinkies is pretty darn good not an exact replica but still pretty awesome, if I can do it you can do it, let's get baking! :)

Step 1: Ingredients/Tools

Ingredients:

Cake

  • 1 16-ounce Pound cake mix (or use the dry ingredients from a homemade pound cake, I have one here on instructables) (453g)
  • 2/3 cup of water (158ml)
  • 4 large egg whites

Filling

  • 2 tsp. hot water (10ml)
  • 1/4 tsp. of table salt (1g)
  • 1 7-ounce jar of marshmallow cream (198g)
  • 1/3 cup of confectioner's sugar (35g)
  • 1/2 tsp. of vanilla extract (2ml)
  • 1/2 cup of shortening or butter (95g)

Tools:

  • Aluminum Foil or Twinkie Pan
  • Spatula
  • Hand Mixer or Stand Mixer
  • Bowls
  • Piping bag or zip lock bag with injection tip
  • Kitchen spray

Step 2: Form the Twinkie Pans

First let's preheat the oven to 325 F (162 C). Next let's take a large rectangle of aluminum foil, fold it over twice so you are left with a small sturdy piece. Then fold that around a spice container. Those tend to be about the size of a Twinkie. After you fold it around, bring in the foil of each end together sealing the end. Do that for the other end. Now you made a little Twinkie boat or pan. :) Place them in a 13x9 pan. There are some "Twinkie" pans that you can buy and if you are going to be making them often or other treats with similar shapes it might be a good idea to get one. Otherwise just make them out of foil.

Step 3: Pound Cake Mix

For the cake part we are going to use a modified pound cake mix, you can find the pound cake box mix at a local supermarket, or use the dry ingredients from a homemade pound cake recipe. Then pour the mix in a large bowl and add your water to it. Mix until well blended, scraping the sides of the bowl as needed.

Step 4: Beat Those Egg Whites

Now take the egg whites and beat them with a mixer until stiff peaks form.

Step 5: Fold, Fold, Fold

Next combine the egg whites with the cake batter and fold them together with a spatula. Do not stir and do not use a mixer! Run your spatula underneath and then fold it over on top of itself, etc. until all blended together. The result will be a nice fluffy cake batter.

Step 6: Fill and Bake

Next using a measuring cup or spoon fill up the Twinkie pans about half way full. This will make roughly 10 Twinkies depending on the size you made them. Now bake them at 325 F (163 C) for 25 to 30 minutes until when a toothpick is inserted it comes out clean. Once they are baked let them cool completely.

Step 7: Filling Time

Now let's create our filling. First add the salt to the water and stir until dissolved. Next in a large bowl add your marshmallow cream, vanilla extract, powdered sugar, and shortening or butter. Then with a hand mixer or stand mixer blend until well combined, scraping the sides as needed.

Step 8: Piping Bag

Now let's fill up our piping bag with the filling. If you don't have a piping bag you can use a zip locked bag. I also have an injection pastry tip. But you can use a normal tip too.

Step 9: Remove, Poke, Fill

Next let's remove our cakes from their little pans and using a bamboo skewer or chopstick, poke three holes in what you want to be the bottom, and kind of wiggle it at an angle to create a cavity in the inside. Then fill up the holes with the filling. You can wipe off the excess if you like on the top or leave it as is. :)

Step 10: Taste Test

Now take a big bite out of that homemade Twinkie. See the filling in the middle, oh yeah! Homemade Twinkie Heaven! :) Enjoy!

    Could you give us a link to the scratch pound cake recipe you mentioned?

    Yep! :) I would make it like I do in the video/instructable, but separate the yolks from the egg whites and then fold in the beaten egg whites, it will help to make it fluffier. You will probably have cake batter left over depending on how many you make, if you do, just make cupcakes with the leftovers! lol Then you can also pipe filling into those.
