Introduction: Spicy Sambal & Siracha BBQ Steaks

One of my favorite dishes is Kalbi. Usually made with Beef Short Ribs but a flank steak is good too. I use brown sugar and Mirin but I wanted to spice it up a bit and after seeing a Gochujang Ribeye I decided to try a spicy version. Instead of the traditional Kalbi Marinade I used a Sambal and butter based concoction......

I like basting a steak in butter in a nice cast iron skillet so I figured I'd give this a try. I just didn't have Gochujang...

Step 1: Spicy Butter Recipe

Feel free to change the recipe to suit your taste. I know I did...

  • 1 stick salted Butter
  • 1 tablespoon Honey
  • 2 teaspoons Sesame Oil
  • 1 tablespoon Minced Garlic
  • 1 teaspoon Sambal
  • 1 teaspoon Siracha
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Black Pepper

Once the butter is soft just mix everything together with a fork...

Step 2: Cooking Them Up

Just in case, I made one with only salt, pepper and butter. I didn't want to hurt anyone....

I used a rather large skillet so it made it impossible to spoon the butter over the steak but they still came out great.

I first seared each steak with only salt and pepper on both sides in a cross pattern. After the first flip I started spooning the butter mix over them.

Since these were pretty thick I finished them in the oven until they hit 125F

Step 3: Service!

Even the plain one looks nice but the Siracha & Sambal one was terrific!

Just spoon the last of the mix over the top before you serve it.

It was so good I can barely stay awake as I write this....
