Step 1: Ingredients
1 cup warm water; (110-115 degrees)
1 cup whole milk, warmed
2/3 cup butter melted
2/3 cup white sugar
2 teaspoons salt
7 1/2 cups all purpose flour
1 1/2 Tablespoons active dry yeast
1/2 cup melted butter; for brushing the dough and rolls
Step 2: Warm Milk
In a two cup measuring cup warm milk in the microwave for 30 seconds, it will be hot. Now add the one cup of water to the milk and the temperature will be lukewarm perfect for the yeast.
Step 3: Make Dough
In a large bowl add your milk mixture, eggs, 2/3 cup butter, sugar, salt, and yeast. Mix and begin to add the flour to form a soft dough, most if not all of the flour will be used. The dough needs to be a consistency that can be easily worked. You want the dough to be stretchy and moist.
Step 4: Divide Dough
On a lightly floured surface divide the dough into quarters. The quarters don’t have to be perfect, mine aren’t.
Step 5: Roll Dough
Melt half a cup of butter. Roll out each of the balls of dough into a twelve inch circle, spread two tablespoons of melted butter on each circle of dough.
Step 6: Rolling Croissants
Roll each wedge starting at the wide end; roll gently but tightly. Place point side down on an ungreased cookie sheet. Let rise for an hour or until rolls have reached adequate size.
Step 7: Bake Rolls
Preheat oven to 400 degrees and bake for 10-15 minutes or until golden brown. Brush while still warm with butter, best if served warm.
