Intro: Watermelon and Parsley Popsicles
I recently got a super fancy blender and realized I had no reason not to make ALL THE FRUIT POPSICLES.
The boy and I started with these parsley and watermelon popsicles - we saw the recipe in a book called People's Pops. All of the popsicles looked amazing, but the combination of watermelon and parsley sounded especially yummy. :D
The best part? They taste like the best watermelon you've ever had in your life.
STEP 1: Ingredients + Tools
Ingredients:
- 1 small bowling ball sized watermelon (mine yielded about six cups of chopped, deseeded watermelon)
- 3/4 cup simple syrup
- 1-2 tablespoons parsley, finely chopped
- pinch of salt (optional)
Tools:
- popsicle molds
- blender
The blender I'm using is an Oster VERSA - it's awesome and half the price of the lower end Vitamix blenders. I highly recommend it if you're looking for a heavy duty blender - it's really close to the Vitamix we've got in the Instructables test kitchen. :D
STEP 2: Peel and Deseed the Watermelon
Cut the watermelon in half and then take the skin off with a sharp knife.
Deseed as needed (sure, you could leave them in, but they never fully break down in the blender) and roughly chop the watermelon.
Add to your blender.
STEP 3: Blending + Pouring
Blend the watermelon until you get it to a consistency you like. I like mine with small chunks!
Finely chop the parsley and add it to the blender along with the simple syrup. (Add in a pinch of salt now if you're into that!) Pulse a couple times to get it all combined.
Pour into popsicle molds. Chug whatever doesn't fit :D
STEP 4: Freezing + Storing
Freeze until set (about 4 hours) and then unmold. The original recipe suggested storing the popsicles in freezer bags which is genius!
Storing them in freezer bags means you can have a popsicle whenever you please and not have to fight with unmolding them every single time. Plus, it frees up the mold to make even more. :D

One culinary note about salt and sugar; salt ENHANCES sweet flavors, so you can actually use less sugar than you would without that pinch of salt.

Healthy pops for unsuspecting kids. Basil would be better in like V-8 juice pops. Mmmmm. Love this! Thanks for your time.

It really does taste like watermelon on steroids! The sugar really livens up the watermelon so it's perfect and sweet, and the parsley gives it a slight "green" flavor that mimics the white rind on a watermelon. Soooooo good.

Unflavored simple syrup - just sugar and water. I think it's necessary, honestly! The high sugar content helps flavor the popsicles and also gives it a more crumbly texture, so it's easier to eat.

That design on the watermelon makes it look especially pretty! My parents took a 2 week vacation so I'm totally trying this with them!
