Introduction: ☻ Pumpkin Brownies Recipe

Last week we premiered our very own 'The Season of Pumpkins.' So today, we picked out of our pumpkin patch a very decadent dessert: Pumpkin Brownies with Walnuts!: Hmmm, Pumpkin and Chocolate at the same time, we like the sound of that!

Full Ingredients

Brownie Mix:

  • 1 cup of All-Purpose Flour
  • 1/2 cup of Cocoa Powder
  • 1 cup of Sugar
  • 1 tsp of Pure Vanilla Extract
  • 1 tsp of Baking Powder
  • 1/4 tsp of Salt
  • 3 Eggs
  • 1/2 cup of Chopped Walnuts
  • 4 tbsps of Melted Butter

Pumpkin Mix:

  • 1 cup of Pumpkin Puree
  • 1/2 cup of Sugar
  • 1 tsp of Pure Vanilla Extract
  • 1/2 tsp of Ground Cloves
  • 1/2 tsp of Ground Cinnamon
  • 4 ounces of softened Cream Cheese

Step 1: Video Demonstration

Step 2: Brownie Mix

In a large bowl, add 1 cup of All-Purpose Flour, and a 1/2 cup of Cocoa Powder. [ whisk ]

Tips, sift both the flour and cocoa powder.

Step 3: Still Working With the Brownie Mix

Now add, 1/4 tsp of Salt, 1 cup of Granulated Sugar, and 1 tsp of Baking Powder. [ whisk ]

Step 4:

In a smaller bowl, add 4 tbsps of Melted Butter, 1 tsp of Pure Vanilla Extract, and finally dump in 3 Eggs. (Give it a quick stir, and set aside)

-- You'll be using this for alternating purposes shortly. Also, an additional 2 tbsps can make a very moist brownie if interested.

Step 5: Pumpkin Mix

For the pumpkin mix, cream together 4 ounces of Cream Cheese, and a 1/2 cup of Granulated Sugar.

Tip - make sure to leave the cream cheese out in the morning, or at least thawed for 3 hours before using. You want the cream cheese to be at room temperature for sure.

Step 6: Still Working With the Pumpkin Mix

To this sugar cloud of cheese, go ahead and add 1 cup of Pumpkin Puree, 1 tsp of Pure Vanilla Extract, 1/2 tsp of Ground Cloves, and finally a 1/2 tsp of Ground Cinnamon.

-- Make sure to mix it well, like literally dance around, mix, and then dance again :) You get the point right? ;) And then when you're done, set aside.

Step 7: Back to the Brownie Mix

Now, alternate the butter/eggs/vanilla extract mix, with the brownie mix. Watch video for full demonstration.

Step 8: Almost There!

To the fully mixed brownie batter, add a 1/2 cup of chopped Walnuts. Make sure to incorporate it in, very well.

Now, make sure to butter a baking pan. And preheat your oven to 375 degrees.

Step 9:

Now you're going to take your Brownie mix, and your Pumpkin mix and add it in the pan like this:

-- 1/2 of the brownie mix FIRST

-- The entire pumpkin mix SECOND

-- And finally the rest of the brownie mix LAST

Watch video for full demonstration. Now stick this baby in your preheated oven for 40-45 minutes.

Step 10: Conclusion

Once you're all done, leave the Pumpkin Brownie in the pan (covered) for 2 hours. And then cut along the sides and enjoy! Thanks for checking us out again for The Seasons of Pumpkins marathon. And be sure to check back on what else we have brewing in our pumpkin patch.

    I feel like there was a step missing somewhere. I tried these today and was disappointed with the results. The brownie portion of the batter was very thick and dark and didn't look like the picture provided. I found myself checking over the ingredients and amounts multiple times to ensure I didn't miss something. The end result was that the brownie portion was bland and not very moist. A pan size was not listed as well, I used a 9x9 pan and it only needed 35 minutes despite my oven usually taking a bit longer to cook things..

    I'm sorry that you had trouble. Did you look at the video provided instead of going by the steps? You should have gotten exactly what I turned up with. Also in the video, a pan size is shown. Not the exact measurements but what I used. Also, its supposed to be cooked at 40-45 minutes. Did you leave out the eggs, and cream cheese? Also did you "sift" your flour? For tips and tricks, I always mention to visit the website for those.

    I did sift the flour and the cream cheese was at room temp, but I didn't leave the eggs sit out. I did breeze through the video hoping to see something that I missed. I don't doubt yours turned out well, I was just worried that you had forgotten to put something in the written instructions.

    They were just perfect. A little fudge and moist with the pumpkin part, and just soft with the brownie part. It def heaven in my mouth personally lol.
