Introduction: 20-minute Asian Chopsuey (crunchy!)

This is my absolute favourite recipe- it's easy, quick and DELICIOUS!

Asian inspired chopsuey ramen with crunchy fried noodles which take a total of 20 minutes from start to finish!

Supplies

  • Noodles (store bought asian/ramen noodles)
  • Half a Red/Yellow bell peppers (capsicum)
  • 1 cup Mushrooms
  • Spring Onions
  • 1 Egg
  • 1 tbsp Miso Paste
  • 1 tbsp Soy sauce
  • 1 tbsp Sweet and Spicy tomato sauce
  • 1 tbsp Vinegar
  • 1 tbsp Honey
  • Oil for Frying
  • Salt to taste
  • (optional - half tsp curry powder)

Step 1: Let's Start! - Boil Noodles and Egg

Start by boiling 4 cups of water in a pan and add your asian ramen noodles to that. Now remember store bought ramen noodles are usually pre-cooked, so these noodles will take only about 6-8 minutes till they're completely done.

In the same pan wash and add an egg. This way by the time the noodles are done, the egg will be half-boiled.
(if you don't like it half-boiled, drain out the noodles but leave the egg in the hot water for another 6 minutes or so to completely cook it).

Once done, cool the noodles and spread on a kitchen towel to dry them.

Step 2: The Vegetables!

While the noodles are boiling, finely chop half a bell pepper (capsicum), a handful of mushrooms and some spring onion. The finer the bell pepper is cut, the quicker it'll cook, so cut it in thin long juliennes.

Step 3: The Broth!

By now your noodles should've boiled and the vegetables should've been cut!

Keep them aside and add about 3 cups of water to a pan. Add the soy sauce, vinegar, hot and sweet sauce and honey to it and gently let it simmer for minute or two. You can also add a tsp of curry powder to it. Then add a tbsp of miso paste to it. let it simmer for another minute, taste and salt accordingly.

Then add the bell pepper and after about 2-3 minutes add the mushrooms. Cook for another 3-4 minutes and garnish with the finely chopped spring onion.

( Pro tip- if your broth is very water, mix 1 tbsp of cornstarch or custard powder in 2 tbsp of water separately in a cup and add that to the broth. it'll instantly thicken it up.)

Step 4: Fry the Noods

While the broth is simmering away, heat up some oil and fry the noodles in small batches until golden and crispy. Let it rest on a kitchen towel to absorb all the excess oil.

Step 5: Plating Up!

Take a bowl and put some fried noodles in it. then add two ladles of the broth over the noodles. then add some more fried noodles to it. garnish with the finely chopped spring onion. Gently cut an egg in half and suspend in the broth and voila you're done! and all in about 20 minutes!

Step 6: Tips

This is basically comfort-food. You can modify it howsoever you may like.
Don't want to fry the noodles? just add simple boiled noodles.
Want to cut the time in half? boil the noodles directly in the broth along with the vegetables!
Don't have red bell peppers? add literally any vegetable in your fridge! you can even add cottage cheese/ tofu/ chicken to this.

Want to make this sweeter? add more honey. or add a tbsp of normal tomato ketchup to this.

Don't have miso paste but want to add even more flavour? add a packet of ready-made ramen seasoning while boiling your broth.

Modify it to your liking and enjoy!
