Introduction: Almond Roca
In this Instructable I will show you how to make Almond Roca. This homemade almond roca recipe is fairly easy to make with very few ingredients. Almond Roca is essentially an English Toffee that uses almonds, but they are very close to the same. And some people use the names interchangeably. This is a family favorite treat to have during the Holidays, if I can make it you can make it, let's get started!

Step 1: Ingredients/Tools

- 1 pound of butter (4 sticks) (450g)
- 1/3 cup of water (80mL)
- 2 Tbsp. of light corn syrup (40g)
- 2 cups of white granulated sugar (450g)
- 1 cup of almonds (I use 1/2 cup slivered and 1/2 cup roasted)
- 11.5 ounces of milk chocolate chips (or dark, semi-sweet) (330g)
- sheet pan (11x17 works great) (greased, I use butter)
- large pot
- oven mitts
- butter knife
Step 2: Melt Butter
First lets place our large pot on the stove top and set it to medium heat. Now put in your butter and melt it, stirring occasionally. We don't want the butter to burn.
Step 3: Water, Corn Syrup, and Sugar
Now we add in our water, corn syrup, and white granulated sugar to the pot. Stir to mix them together, stir occasionally so candy/toffee base doesn't burn. These are the basic ingredients for a Toffee. Almond Roca is essentially a toffee.
Step 4: Stir and Heat
Now we keep stirring until the candy gets to 290 F. (143 c) So just below the hard crack point. The color of the candy will change from a whitish pale yellow to a light brown color. You really need to stir constantly after the heat gets past 200 F. Some recipes will have you stir less, or wait until it gets hotter. The reason why they may have you wait to stir, is some butter may separate from the candy, if you stir too much too soon. I like to error on the side of caution, meaning, not wanting my candy to burn, haha. And it is okay, if a bit of separation occurs. This whole process will take 15 to 25 minutes to get the candy heated up to 290. Once you get to 290, turn the heat off and add in your slivered almonds (or almond chunks).
Step 5: Pan It Up
Now while the candy is still very hot transfer it over to a sheet pan that was greased with butter or shortening. Make sure to use oven mitts with your pot, unless you have handles that don't heat up. I use a 11x17 inch pan. It gives me a nice thickness for the amount of candy I am making.
Step 6: Chocolate!
Now while the candy is still hot, sprinkle the top with your chocolate chips. Then let them sit there for 3 to 4 minutes, they will soften up nicely. Next use a spatula and spread the melted chocolate around. Alternatively, you can heat up your chocolate on the stove with a double boiler or in the microwave (bursts of 25 to 30 seconds, then stir, etc. until melted). After the chocolate has been spread evenly on the top of the candy/toffee, sprinkle the top with your roasted almonds. Then use a spatula, and push some of them down to make sure they aren't loose. Now place your candy in the fridge and allow it to set, which will take 45 minutes to 90 minutes.
Step 7: Break and Serve
Now once the candy has set, pry up the side with a butter knife and then start breaking it apart into the sizes that you want. Now enjoy those delicious candies! :)
