Introduction: Arroz Con Leche!!

Arroz con Leche or rice pudding is a Latin American dish but is found almost everywhere. This is a simple dessert to perfect and the best thing is that you can store it after you make it. It is best to eat it right away, but if you put it in the fridge you can just take it out later and reheat it in the microwave if you want it to be warm.

It is really good, and there are lots of different ways to make Arroz con Leche.You can make it with raisins or without.

Step 1: Gather What You Need...

Ingredient:

  • 1 1/2 cups milk*
  • 8 whole cloves
  • 3 cinnamon sticks
  • 3/4 tsp nutmeg
  • 2 cups rice
  • 2 1/2 cup hot water
  • 1 tsp vanilla
  • 1 can condensed milk
  • a small can evaporated milk or half of a normal can*
  • raisins - optional

* Will be adjusted as the rice cooks. You may need more.

Step 2: Wash Rice...

Measure the rice, then put in a strainer and wash it with water.

Step 3: Lets Get Cooking!!

In a medium pot put the rice and water to start boiling. Make sure it is in medium heat. Also be sure that the water is about one inch above the rice.

Step 4: Now for the Flavour...

Add the cinnamon sticks, whole cloves, and nutmeg to the rice while it is simmering.

Step 5: Stirring...

Stir once in a while, and make sure the rice doesn't stick to the bottom of the pan.

Step 6: Observe...

When the rice has absorbed most of the water, add the evaporated milk and whole milk. Stir until the rice is soft. If the rice isn't soft and most of the liquid has been absorbed, add a touch more milk and evaporated milk.

Step 7: Adding..

Add the condensed milk and vanilla.This will make the rice sweet, so if you don't like it too sweet, you can put in less.

Step 8: Stirring..

Stir again, then add raisins. You can add as many or as little as you want. If you want to substitute raisins with walnuts,coconut, or nothing, that's fine.

Step 9: Temperature...

Lower the temperature. This will prevent the rice from sticking to the pan.

Step 10: Taking Off Heat...

When the rice has a pudding-like consistency, take it off the heat. If the rice is still hard or dry, you can add more milk and evaporated milk and let the rice cook more.

Step 11: Cool Down...

Let the rice cool down for 15-30 minutes. Make sure you take out all of the whole cloves and the cinnamon sticks.

Step 12: Serve and Enjoy!!!
