Introduction: Bacon Wrapped Scallops

With summer just around the corner, now is the perfect time to learn how to make this fun, easy and tasty treat. Bacon wrapped scallops also work great as an appetizer or a main course.

Ingredients you will need are:

12 6 inch bamboo skewers (soak in warm water for 30 minutes to eliminate splinters.)

12 slices of Applewood Smoked Bacon (you can substitute any other kind of thick sliced bacon here as well, except turkey bacon. That is bacon blasphemy and the gods of bacon will NOT be happy.)

12 10 U scallops ( 10 U is the largest size scallop typically available in your grocer's seafood department. 10 U means that it takes 10 scallops or Under to make a pound.)

2 Tablespoons of Old Bay Seasoning

2 Tablespoons unsalted butter that's been melted in the microwave (place butter in a microwave safe container and "nuke" for 10 seconds, stir, then "re-nuke if necessary until melted.)

That's it for ingredients.

You will also need:

1 Oven set at 350 degrees

1 baking sheet lined with aluminum foil, shiny side down

1 gas or charcoal grill



Step 1: Preparation

Place bacon on foil-lined baking sheet and bake in oven @ 350 degrees for 12 minutes. The edges of the bacon should be golden at this point but the bacon should still be flexible.

Remove bacon from the oven and allow to cool for 10 minutes. Resist the urge to eat the bacon at all costs. We know its tough, but the end result will be worth it. I promise.

Wrap each scallop with one piece of bacon.

Push a bamboo skewer through the bacon wrapped scallop. Skewer should go through the bacon on one side, through the center of the scallop and then through the bacon on the other side, locking it in place. If you you push the skewer through where the bacon ends everything will stay nice and neat.

Place skewers on serving plate.

Season skewers with Old Bay Seasoning, making sure to dust both sides generously.

Fire up the grill! (Ask a parent or someone older to help you with this if the igniter is broken or if youve never done this before, were supposed to be cooking bacon, not you!)

Place skewers on the grill and drizzle with the melted butter (you can reheat the butter in the microwave if its started to solidify again at this point.)

Turn frequently and cook until scallops are done throughout (about 7 minutes total)

That's it youre done! ......... and about to embark on a culinary exercise in bacony Awesomeness the likes of which mere mortals rarely experience.

Just don't turn your back on them because your dog loves bacon too.






Step 2: Tangy BBQ Sauce (optional)

Ingredients:

3/4 cup of Sweet Baby Rays BBQ sauce

2 tablespoons white or apple cider vinegar

Combine ingredients into a small bowl

Stir and serve
