Introduction: Baked Eggplant and Peppers Dish

This is a simple and quick dish that can be served with or without meat. I personally prefer to eat it with fish. You will need:
  • Eggplants
  • Green peppers
  • Red peppers (optional)
  • Onions
  • Olive oil

Step 1: Instructions

Preheat oven to 375º F (191º C). Slice the eggplants, the green peppers and, the onions. Put all the ingredients in a glass Pyrex© like bakeware. Pour a ¼ cup of olive oil over the ingredients. Bake for 60 minutes adding more olive oil as needed.

    And it smells wonderful! If you would prefer to cook this dish instead of roasted in the oven, you can cook this on a covered pan or electric pan too.
