Introduction: Banana Minion Cupcakes

Step 1: Banana Cupcakes


240g / 1 Cup Unsalted Butter

240g / 1 1/4 Cups Caster Sugar

3 Large Eggs

240g / 2 Cups All-Purpose Flour

2 1/2tsp Baking powder

1/4tsp Bicarbonate of Soda

1tbsp Vanilla Extract

3 Bananas

50ml / 1/5 Cup Milk

Beat the butter and sugar together. Slowly add the three eggs followed by the flour. Add the baking powder, soda and vanilla extract. Chop up the three bananas and blend in a food processor. Pour the banana mixture into the batter followed by the milk.

Pour the cake batter into cupcake cases and bake in an oven at 200 degrees c for 18 minutes.

Leave to cool on a wire rack.

Step 2: Buttercream Frsoting

240g / 1 Cup Unsalted Butter

300g / 3 Cups Icing Sugar

2tbsp Milk

1tsp Vanilla Extract

Beat the butter and slowly add in the icing sugar followed by the milk and vanilla. Cut a circle into the tops of each cupcake and spoon out the centre. Pipe the buttercream into the cavity and place the cut out circles back on top. Spread the remaining buttercream on top of the cupcakes.

Step 3: Fondant Icing






Roll out the coloured icing and create the minion faces.
