Introduction: Battered Fish & Onion Rings

Two of my favorite dishes to order in a fast food joint is battered fish and onion rings. I saw this Youtube recipe on Facebook and I had to try the batter out on fish and onion rings.

I made one change; I used corn flour for its flavor and it is gluten free. This is a very easy deep fryer batter recipe and it goes good on everything from fish to onion rings.

Step 1: Ingredients & Supplies

1 lb. or ½ kg Sole fillets

1 Spanish Onion

2 cups or 500 ml flour

1 tablespoon salt

1 teaspoon pepper

1 tablespoon baking powder

1 ½ cups milk

2 eggs

Oil

Wax paper

Cookie sheet

Bowl to mix the batter in.

Whisk to mix the batter.

Tongs to turn the battered fillets over while frying.

Deep fryer or a deep wide frying pan to fry fillets in.

Step 2: Preparing the Sole Fillets

Rinse the Sole fillets in cold water and chill the fillets in the freezer on a flat tray for twenty minutes while you mix the batter. I like a sheet of wax paper on the try to keep the fillets from sticking to the tray.

Step 3: Making the Batter

Add flour, salt, pepper, baking powder, garlic powder, and eggs, to a bowl and mix thoroughly.

Add the milk slowly to the mix until you have a smooth batter.

Step 4: Frying the Sole Fillets

After the fillets have chilled for twenty minutes dip the chilled Sole fillets in the batter for a minute to coat the fillets thoroughly.

Heat deep fryer or oil in a pan to 375⁰ F or 190⁰ C, I like to use a deep frying pan filled about half way to deep fry my fish. Place the Sole fillets in the hot oil and fry until golden brown, about three minutes, then turn them over and fry other side for another three minutes.

Place the cooked battered Sole fillets on a plate to drain off any excess oil.

Step 5: Onion Rings

Pick a nice big onion.

Peel the onion and slice the onion in about 3/8 inch thick slices.

Separate the onion rings and let them cool in the freezer for twenty minutes. I like a sheet of wax paper on the try to keep the onion rings from sticking to the tray.

Step 6: Frying the Onion Rings

Dip the chilled onion rings in the batter for a minute to coat the onion rings thoroughly.

Place the onion rings in the hot oil and fry until golden brown, about two minutes, then turn them over and fry other side for another two minutes.

Place the cooked onion rings on a plate to drain off any excess oil and serve with the Sole Fillets.
