In this instructable, I'm going to show you how to make some really great gluten free peanut butter cookies! They are absolutely perfect!

Step 1: Peanut Butter

Using an electric mixing bowl, add 2 cups smooth peanut butter.

Step 2: Sugar

Add 1 1/2 cups brown sugar and 1 1/2 cups granulated sugar. If you want a sweeter taste, add another half cup of each type of sugar. I used a bit less so that it wouldn't be too sweet and it would taste more peanuty.

Step 3: Butter and Coconut Oil

Add 1 cup (2 sticks) butter and 1 cup coconut oil. Stir until it is fully incorporated and very smooth.

Step 4: Eggs

Add 4 eggs. Stir until the mixture becomes creamy.

Step 5: Baking Powder, Baking Soda, Xanthan Gum

After stirring until creamy, add 2 teaspoons baking powder, 2 teaspoons baking soda, and 2 teaspoons xanthan gum.

Step 6: Vanilla

Add 2 teaspoons - 1 tablespoon vanilla extract.

Step 7: Flour and Corn Starch

Add 4 cups oat flour, stir until incorporated, then add 1/2 cup corn starch.

Step 8: Making Your Cookies

The dough won't be hard, but it will look kind of sticky. When you put your hand in it, it won't really stick though. Your going to take a little spoon full of dough and roll it in your palms until it gives you a bit of a circle. Then, set it With the dough done, you can sprinkle out some sugar on a plate. Roll the dough ball in the sugar until all sides are coated, then set on cookie sheet. Using a fork, press the cookie down. It will give it the classic peanut butter cookie look:)

Feel free to be creative. My mom really likes chocolate and peanut butter (yum!), so she asked that I use some chocolate chips on some of the cookies. You can use chocolate chips or M&Ms to add a yummy chocolatey flavor!

Step 9: Bake

Bake cookies for 12 minutes at 350° F to give them a soft, chewy texture. They will harden once they come out of the oven, so don't worry if you take them out and they are still really, really soft.

Once out of the oven, allow them to cool for a few minutes before you take them off the cookie sheets. Set them to cool on cooling racks for 5-10 minutes, then serve!

Step 10: Enjoy!

Serve warm for the best taste! But feel free to save them for a few days as well. Enjoy!
