Introduction: Better Than Prozac Cookies

These cookies are the answer to Covid-19 fatigue, lock down boredom, quarantine frustration, and well anything that gets you down. They are quick and easy, they can be made soft or crunchy (we prefer crunchy in my house) and you will always feel better after having a few for a snack, or a meal if you want to.

The Necessary Ingredients;

3/4 cup Butter Flavored Crisco

5/4 cup Brown Sugar ( I like dark brown, but use your choice of dark or light or a mix)

2 Tbs. Milk

1 Tbs. pure vanilla extract

1 large egg

7/4 cups of all purpose flour

1 heavy pinch of kosher salt ( I prefer Diamond Crystal for baking and cooking)

3/4 tsp baking soda

I cup milk chocolate chips (if you prefer semi sweet you can use them but we like milk)

1 cup secret ingredient (ok I guess I will tell you what this is ground up in a food processor, butterfingers candy bars)

A stand mixer Measuring cups and spoons a baking tray a silicone baking mat for the tray (not really necessary but I like to use them whenever I bake).an oven that can be set to 375 degrees (f), a timer, a cooling rack. Probably not a cookie jar since they wont last long enough to store.

Step 1: Mix the Wet Stuff

Preheat your oven to 375 degrees (f)

Into the bowl of your stand mixer drop the Butter Flavored Crisco and the brown sugar, mix with the paddle attachment until well mixed, then add the milk, egg & vanilla, and continue to mix until you get a nice smooth but wet looking shiny batter.

Step 2: Add the Dry Stuff

With the mixer running on slow add the dry ingredients to your mixing bowl. Add the flour one quarter of a cup at a time to keep from getting flour all over your self and the kitchen counter, floor, cabinets... pretty much everywhere. Continue to mix until your batter looks completely mixed together and you do not see any flour in the bowl.

Step 3: Add the Fun Stuff

With the mixer still running on slow, add the chocolate chips and the secret ingredient, until well mixed.

Step 4: Get Them Ready to Bake

On your ungreased baking sheet, or your silicone baking mat place up to 12 rounded table spoons of batter on the tray, and slide them onto the center rack of your preheated oven.

Step 5: Bake-m-Up

If you like soft and chewy cookies bake them for 9 or 10 minutes, if you like crunchy bake them for 12 or 13 minutes. Remove them from the oven promptly, and transfer them to a cooling rack to cool, and so you can use your tray to get the next dozen into the oven.

Step 6: Eat-m-Up

As soon as they are cool enough to hold in your fingers, go ahead and start eating them, share them with your family, friends and anyone who is your bubble. They do stay fresh in an air tight container for about 5 days, but they never seem to last that long in my house.
