Blackberry pie bars are simple and quick desserts or snacks you can make with blackberries and other pantry ingredients.

You will need a food processor or just a bowl and a fork to make a dough and crumbs. Yes, that's simple!

Blackberry and lemon juice filling is so delicious! You can use other berries or your favorite jam for the filling. Fresh blackberries are my favorite berries, so I decided to go with them.

These bars will last about 5 days in the fridge. But they will be gone in less than that time!

Supplies

Blackberry jam:
300 g blackberries - 2 cups
2 tbsp brown sugar
2 tbsp corn meal

Dough:
200 g flour - 1 and 2/3 cups
100 g butter cold and cubed - little less than 1 stick
2 tbsp water

Crumbs:
120 g flour - 1 cup
50 g butter - little less than 1/2 stick
1 tbsp water
1 tbsp brown sugar
1 tbsp almond slices

Decoration (optional):
Chocolate
Lemon zest

Step 1: Blackberry Jam

Put all ingredients for the blackberry jam (except lemon) in a pan.

On a low heat bring the mixture to boil, cook stirring for 5 minutes.

Remove from heat and squeeze fresh lemon juice. Mix and leave to cool.

Step 2: Make the Dough

Combine all ingredients for the dough in a bowl or food processor.It should come together easily.

Press the dough with your fingers to the bottom of the buttered baking pan.

Step 3: Make the Crumb Topping

Pulse all the ingredients for the crumb topping in the food processor or mix with your hands.

They should form the crumbs, when you press with your fingers.

Step 4: Assemble and Bake

Preheat the oven to 375 F / 190 C.

Distribute blackberry jam to the dough.

Sprinkle the crumbs on top of the jam.

Bake for 40 minutes or until edges are slightly golden. Let them cool for 10 minutes, slice with a knife.

Add lemon zest and chocolate pieces on top. You can also sprinkle some powdered sugar on top and enjoy!
