Brazilian Cheese Bread

Brazilian Cheese Bread, Known As Pão De Queijo, Is A Popular And Delicious Brazilian Snack. It’s Gluten Free And Made With Tapioca Flour. Beloved For Its Chewy Texture And Cheesy Flavor. It Originates From The State Of Minas Gerais But Is Enjoyed Throughout Brazil And Beyond. Here’s A Simple Recipe To Make Your Own Pão De Queijo At Home.

Key Characteristics Of Pão De Queijo

  1. Gluten-Free: Pão de Queijo is naturally gluten-free since it is made with tapioca flour rather than wheat flour. This makes it a popular choice for those with gluten sensitivities or celiac disease.
  2. Chewy Texture: The use of tapioca flour gives the bread a unique chewy and slightly crispy texture, which is distinct from other types of bread.
  3. Cheesy Flavor: Cheese is a fundamental ingredient in Brazilian cheese bread. Parmesan cheese is commonly used, but other cheeses like Minas cheese, mozzarella, or cheddar can also be included for different flavor profiles.
  4. Bite Sized: The bread is typically shaped into small, round balls, making it a convenient bite-sized snack.

Supplies

The basic ingredients for Pão de Queijo include:

  • Tapioca Flour: Provides the unique texture and makes them Gluten-free.
  • Cheese: I have used a mixture of four cheese Parmesan, Cheddar Mozzarella and Colby.
  • Milk: Adds moisture and richness and it’s best to use whole milk for perfect texture and taste.
  • Butter or Oil: Adds fat for flavor and texture. I like to use Olive oil.
  • Eggs: Help to bind the ingredients and add to the chewy texture.
  • Salt: Enhances the overall flavor but must be careful in using salt as cheese are salty as well.

  • 1/3 Cup Olive Oil
  • 1 Egg

  • 1/4 Cup Mozzarella Cheese
  • 1/4 Cup Parmesan
  • 1/2 Cup Fontina

Step 1: Preheat Oven and Prepare Baking Tin

  • Pre heat oven to 200 C and then spray a mini muffin tin with some oil.

Step 2: Prepare the Batter in Blender Jug

  • In a blender jug put Milk, Olive oil, Egg and Salt and give it a few seconds mix.
  • Add in Tapioca starch and give a blend to incorporate everything.
  • Add in cheese mix and give few pulses to incorporate all ingredients together to form the batter.

Step 3: Add Batter to Baking Tray & Bake

  • Pour batter all the way to the top.
  • Bake them at pre heated oven for 15-20 minutes or until they are golden on the outside with high dome.
  • Take them out and let rest for just few minutes and then enjoy.

Storing Leftover Brazilian Cheese Breads

Brazilian cheese puffs are best enjoyed freshly baked as they have most texture and flavors but if you have some leftovers store them properly to enjoy later.

At Room Temperature:

  • Duration: 1-2 days.
  • Method: Place the baked Pão de Queijo in an airtight container or a plastic bag to keep them from drying out.

In the Refrigerator:

  • Duration: Up to 1 week.
  • Method: Store the baked cheese bread in an airtight container. Reheat in an oven or toaster oven to restore their chewy texture before serving.
