Introduction: Bread Machine Bagels

About: bibliophile, anticonsumerist, dog lover. If I can't make it, I dont need it!
Did you know with a bread machine and just a few ingredients you can make wonderful bagels? Read on for foolproof directions!
First, know your machine. This recipe is for a machine that makes up to a 2 pound loaf of bread. Also, the order in which you put the ingredients in the machine can vary. My machine you put water first, the salt, sugar, flour, and yeast last. Refer to the manual for your machine if unsure.
For the recipe you need:
1 cup water 80 degrees (water temp is very important! Use thermometer!)
1 1/2 tbl sugar
1 tsp salt
3 cups bread flour
2 1/4 tsp active dry yeast

1 beaten egg for glaze
Toppings of your choice

First, put the water, then sugar and and salt, then flour in bread machine. Put yeast in last. Start machine on dough setting. This takes 1 hour and 20 minutes for my machine.

Step 1:

When the dough is ready, tip it out onto a lightly floured surface. I like to put down waxed paper to avoid a mess. Divide dough into nine pieces. Roll into balls. Gently pull about a one inch hole in the center of each bagel. Place of greased baking sheets, cover lightly so the bagels don't dry out, and let rise for 30 minutes.

Step 2:

While the bagels are rising, bring a big pot of water to boil. Very carefully put a couple bagels in to boil, about 3 minutes on each side. The bagels will poof up considerably during this step. Using a slotted spoon, very carefully drain the bagels and put back on the greased baking sheet. Brush with egg wash and sprinkle with toppings if you choose. Bake at 400 degrees for about 20 minutes. Cool on wire racks.

Step 3:

Grab the butter, jelly, cream cheese and dig in! These are preservative free so eat them up quick or freeze (these freeze beautifully). Enjoy!
