Introduction: Brookeo Pie

The Brookeo Pie is the greatest combination of cookies, brownies, and oreos. Not only does this cause a mouth-watering sensation, but it is also really fun to make. This recipe works for muffins as well, so it's up to you what to choose. We hope you enjoy the recipe!!

Step 1: Gather the Ingredients

For Chocolate Chip Cookie Pie Crust:

Ingredients:

  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 cup salted butter (1/2 stick)
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon table salt
  • 1/2 teaspoon baking soda
  • 1 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips (Optional)

Supplies:

  • Large mixing bowl
  • Spoon/whisk
  • 9" diameter pan

For Brownie Filling:

Ingredients:

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Supplies:

  • Large Mixing Bowl
  • Spoon/whisk

Step 2: Prepare and Preheat

Preheat the oven to 375 degrees. Then grease the 9" pan.

Step 3: Mix the Sugars

Pour the 1/2 cup of white sugar and 1/2 cup of brown sugar into one bowl, and stir. Make sure there are no clumps and it is mixed thoroughly.

Step 4: Butter & Eggs

Soften the 1/4 cup of butter for roughly 30-35 seconds in the microwave. Once mixed, pour the butter into the bowl. Then, add the egg (only 1) and mix. Make sure everything is thouroughly mixed before moving on.

Step 5: Vanilla, Salt, and Baking Powder

Add the 1/2 teaspoon of vanilla, 1/2 teaspoon of salt, and 1/2 teaspoon of baking soda in to the bowl and mix.

Step 6: Flour

Add the cup of flour and mix thouroughly. Make sure there is no extra flour along the sides of the bowl or under the dough.

Step 7: Pour the Chocolate Chips

IMPORTANT: If you are planning to use medium or big chocolate chips, skip this step, and place the chocolate chips on the cookie dough after you place it on the pie pan.

If you are using small chocolate chips you could also do this step afterwards if you please, but if you choose to pour 1 cup of chocolate chips now, make sure you mix it well.

Step 8: Place the Crust Down on the Pan

Make sure you remembered to grease the pan, then place the cookie dough in the pan and line the pan. Make sure to have the pie crust as thin as possible without seeing any holes. The crust will expand in the oven either way. If you chose to skip the chocolate chips, now is a good time to place them on the pie crust.

Step 9: Place the Oreos

Use as many oreos as possible when you're placing them down on the pan. For a 9" diameter pan we were able to fit 12.

Step 10: Begin the Brownies

Melt 1/2 cup butter fully, but monitor in case the butter begins to pop. Pour the butter into a bowl, as well as 2 eggs, and 1 cup white sugar. Also add the 1 teaspoon vanilla extract. Mix thouroughly and make sure there are no clumps.

Step 11: Add in the Flour, Cocoa, Salt, and Baking Powder

Once the mixture is smooth, add in the 1/2 cup all-purpose flour, the 1/3 cup of unsweetened cocoa, 1/4 teaspoon salt, and 1/4 teaspoon of baking powder. Mix slowly until one mixture begins to form, then continue to mix until you have a smooth, dark brown mixture.

Step 12: Finish It Up

Once the brownie batter is completely mixed, pour it into the pie. Then spread evenly and make sure it is smooth. Also be careful to not let any brownie batter spill over the sides in the oven, because this will cause a mess.

Step 13: Bake and Enjoy

Place the pan in the oven for about 15 mins. Take it out to check the brownies. If the brownies are still liquidy, then lower the heat to 350 degrees and put the pie back into the oven. Check every 5-10 minutes to see if the brownies have become solid. When they are solid take them out and decorate however you would like. We hope you enjoy!!
