Introduction: CARAMEL APPLE CRUMBLE ICE CREAM

Step 1: VANILLA ICE CREAM

397g Condensed Milk

480ml Whipping Cream

1tsp Vanilla Bean Paste

Whip the cream until soft peaks form. Add the condensed milk and vanilla bean paste to the whipped cream and whip again.

Step 2: APPLE PUREE

2 Bramley Cooking Apples

2tsp Caster Sugar

1tsp Light Brown Sugar

3tbsp Water

Peel and chop the apples. Add to a saucepan along with the sugar and water and simmer on a low heat. Once the apples have softened, use a hand blender to blend the apples together and then leave to cool.

Step 3: CRUMBLE

100g Plain Flour

50g Unsalted Butter (Cubed)

25g Caster Sugar

25g Light Brown Sugar

Place the flour and butter into a bowl. Rub the flour and butter through your fingertips until the mixture resembles breadcrumbs. Add the sugar and mix together. Place the crumbs on a baking tray and bake at 180 degrees C for 8 - 10 minutes. Before the crumble cools, use a spoon to break up the crumble into small pieces.

Step 4: CARAMEL

Step 5: MIX

Pour half of the vanilla ice cream into a tin or container and add spoonfuls of the apple puree, crumble and caramel ton top. Next, use a knife and run it through the ice cream to create a marbled effect. Repeat this process again with the remaining ingredients. Freeze for 6 hours before serving.
