Introduction: Cajun Purple Cauliflower Steaks With Onions and Peppers

I was so excited to find an amazing purple cauliflower when I opened our vegetable box from the Cornish Food Box Company! I wanted to do something special with it it to make the most of its beautiful colour and flavour. I decided to make my delicious Cajun Purple Cauliflower Steaks With Onions And Peppers which make a great centrepiece to a vegetarian or vegan meal. They are are an unusually alternative way to to serve cauliflower; rich and and filling, it is a tasty part of a great meal which would be ideal to serve at a dinner party when you want to impress.

Supplies

Purple cauliflower

Small red onion

Green pepper

Heaped teaspoon of of Cajun spice

Quarter of a teaspoon of of paprika

Pinch of salt

Olive oil

Small handful of fresh coriander

Juice of half a lemon or two or three teaspoon fulls from a bottle

Step 1: Chop the Cauliflower

The number of steaks you will get from your cauliflower will vary depending on it's size. I managed two from this medium-sized cauliflower. First, cut down the centre with a large knife. Then cut a steak from each half, about 2 to 3 cm thick, depending on your preference and the size of the cauliflower. Save the rest for another recipe (we served it steamed with a roast the next day).

Step 2: Chop the Veg

Chop the onion, green pepper and coriander.

Step 3: Add the Veg to the Pan

Put the two steaks in the centre of the pan and and spread the onion and pepper around the edge. Generously drizzle the oil over all of the vegetables (about 2 tablespoons) and sprinkle a heaped teaspoon of of Cajun spice over the top. Sprinkle a quarter of a teaspoon of paprika for a mild to medium heat, unless your Cajun spice already has chilli in it.

Step 4: Cook

Cook on a medium heat for about 20 minutes, or until brown on the outside and soft in the middle. Put a lid on; this will help the cauliflower to cook through.

Step 5: Add Lemon Juice

Near the end of the cooking, maybe after 15 minutes or so, add the lemon juice. I gave a generous drizzle over the pan, about a tablespoon if you would rather measure it. Fry for another 5 minutes with the lid on.

Step 6: Serve!

I served the cauliflower steaks with rice, fresh tomato and a sprinkling of fresh coriander. It was delicious!
