Introduction: Cheese Stuffed Turkey Escalopes

I love making homemade chicken or turkey nuggets but I thought why not stuff them with cheese and see what happens.

You can use whatever cheese you like, I decided to use one that melts really easily, but it would work really well with blue cheese too.

I hope you enjoy my recipe.

Supplies

INGREDIENTS:

  • 8 turkey escalopes
  • Cheese (I used tartiflette cheese, which melts really easily)
  • 8 large biscotte (for the breadcrumbs), you could use toasted bread
  • Dijon mustard
  • 2 tbsp dried parsley (or fresh if you can get it)
  • 2 tbsp honey
  • 125g plain yogurt
  • 2 eggs
  • Flour
  • Ground pepper

UTENSILS:

  • Knife and fork
  • Baking tray
  • Plates
  • Blender
  • Spoons

Step 1: Stuff the Turkey

  1. If your turkey escalopes are large, cut them in half.
  2. Spread one side of each escalope with mustard.
  3. Cut a small piece of cheese and envelope it in the turkey.
  4. Place onto a plate.

Step 2: Adding the Breadcrumbs

  1. Preheat the oven to 180°C.
  2. Blend the biscotte (or toasted bread) into fine breadcrumbs.
  3. Take 3 plates and put the breadcrumbs onto one plate, flour in another and the 2 lightly beaten eggs in the last plate.
  4. Take each stuffed escalope and roll in the flour (shake off any excess), then roll into the egg and finally into the breadcrumbs.

Step 3: Bake, Don't Fry

What's great about these escalopes is that you don't need to fry them. Cook them in the oven for 20 minutes, until they are a nice golden colour. Some cheese may escape, but that's okay.

Step 4: Make the Dip

What would go really nicely with these escalopes is a light, fresh dip.

To the plain yogurt add the parsley, honey, mustard and ground pepper.

Step 5: Enjoy!

Serve with a salad and baked potatoes for a comfy meal.
