Introduction: Cheesy Jalapeno Popper Dip

Jalapeno Poppers + Dip? What's better? Cheesy Jalapeno Popper Dip is a great way to satisfy your guests growling stomachs! It's creamy, cheesy, perfectly flavored, and absolutely delicious! Bring it to your next football party and watch it disappear!

You’ll need:

  • 5 + 1 jalapeno peppers
  • ¼ pound bacon
  • ½ cup chopped onions
  • ¼ cup + 1tbs chopped scallions
  • 12oz softened cream cheese
  • 12oz sour cream
  • 1 ½ cup + ¼ cup shredded cheddar cheese
  • 1 can (4.5oz) diced green chilies
  • 1tsp salt
  • ¼ tsp pepper

Step 1: Prep the Jalapenos

Cut off the stems of 5 jalapenos. Cut them lengthwise in half, and remove the seeds. Place them in a pan and broil on HI for 5 minutes. Cut the cooked peppers into strips, then dice. Take the 6th jalapeno and thinly slice it for garnish.

Step 2: Fry the Bacon

Dice the bacon and fry in a pan for about 8 minutes until browned. Add the onions and cook until onions are translucent, about another 5 minutes. Drain and set aside, reserving ¼ cup for garnish.

Step 3: Assemble the Dip

In a large bowl, combine ¼ cup scallions, 1 ½ cup cheese, bacon mixture less ¼ cup garnish, jalapenos less garnish, and all other ingredients. Pour mixture into a 9in round baking dish.

Step 4: Bake and Eat!

Bake the dip for 20 minutes in a 400˚F preheated oven. Top with reserved bacon, remaining scallions, sliced jalapenos and ¼ cup cheese. Serve it with a Pigs-in-a-blanket Ring and/or tortilla chips!
