Introduction: Chipotle Tabasco Style Hot Sauce

I love Tabasco sauce, the Chipotle flavored version is my favorite. My whole family loves to use it, so it gets a bit expensive buying several bottles at a time. My wife and I decided to make our own chipotle flavored hot sauce. After a few iterations, here is our recipe:

Ingredients:
12 dried New Mexico chile pods (found at most grocery stores)
9 tablespoons distilled white vinegar (apple cider vinegar can also be used to add a bit of a citrus flavor)
~1/2 cup water (adjust amount to alter the thickness)
3 teaspoons salt
1 1/2 teaspoon sugar
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
2 teaspoons chipotle chile pepper seasoning

Step 1:

Start by cutting off the stems of the chile pods. I chose to keep the seeds, but if you want a milder sauce you can take them out. Throw the chiles and the rest of the ingredients into the blender. I start with 1/4 cup of water and add more to get the thickness I prefer.

Blend all the ingredients until smooth, It took my Vita-mix a few minutes on high, it may take a bit longer with a regular blender.

Step 2:

Once the concoction is blended, pour it into an appropriate sized bottle. I use a 12 oz bottle, and pour the rest into a ziplock bag and freeze it for use in other recipes.
