In this instructable I will show you how to make chocolate banana muffins. This easy chocolate muffin recipe is sure to impress your family and friends, especially if they like chocolate, bananas and muffins. Combine them all together and you have one fantastic muffin for breakfast, brunch, or as a snack. If I can do it you can do it, let's get baking!

Step 1: Ingredients/Tools

Ingredients:

  • 1/2 cup butter, melted (113g)
  • 3/4 cup of white granulated sugar(170g)
  • 1 tsp. of vanilla extract (5ml)
  • 1 large egg
  • 1/2 cup sour cream (123g)
  • 2 large very ripe bananas
  • 1 1/2 cup of all-purpose (plain) flour (192g)
  • 1/4 cup unsweetened cocoa powder (25g)
  • 1/2 tsp. baking soda (3g)
  • 1/2 tsp. baking powder (3g)
  • 1/2 tsp. table salt (3g)
  • 1 cup chocolate chips (semi-sweet, milk chocolate, dark, white) (175g)

Tools:

  • bowls
  • hand mixer or stand mixer
  • sifter or whisk
  • spatula
  • spoon
  • muffin pan
  • muffin cups

Step 2: Cream the Sugar and Butter

First preheat the oven to 350 F (176 C). Then take your butter and melt it, using the microwave or on the stovetop. Next add the sugar and butter to a large bowl and cream them together with a hand mixer, or use a wooden spoon or something.

*For less sweet muffins, reduce the sugar to 1/2 cup and reduce the amount of chocolate chips by half, you can also use sugar-free chocolate chips.

Step 3: Eggsellent

Next add in the vanilla extract, egg, and sour cream. Then mix once again until just combined.

Step 4: Mash Those Bananas

Now it is banana mashing time! My favorite part. Take 2 or 3 (3 if you want a more pronounced banana flavor) very ripe bananas and peel them and then mash them up. I always use a meat tenderizer for this, but you can use a variety of things. Then place the mashed banana into your batter and once again mix until just combined. If you are using a hand mixer or stand mixer after incorporating the bananas, put the mixer away and do it by hand the rest of the way, this will ensure we don't over mix the batter. :)

Step 5: Dry Ingredients

Next sift all the dry ingredients together into the batter. If you don't have a sifter, whisk all the dry ingredients together in a separate bowl first. Next use a wooden spoon or strong spatula and stir in the dry mixture until all combined.

Step 6: Mmm Chocolate Chips

Time to add in those yummy chocolate chips. I am using a blend of semi-sweet and milk chocolate chips. You can also use white chocolate for a nice contrast. Make sure to leave out about 1/4 of them. We will add these to the top later. Fold those chocolate chips into the batter.

Step 7: Fill Them Up

Next take a muffin pan and add the paper cups. Then fill them all up. I always start with about 2/3rds full in all of them, then come back and spread out the remaining mixture. This will make 12 fairly large muffins. After that sprinkle on the rest of your chocolate chips.

Step 8: Bake and Enjoy

Now place those in a preheated oven at 350 F (176 C) and bake the chocolate banana muffins for 15 to 20 minutes until a toothpick comes out clean after poking them. After coming out of the oven, let the muffins cool for 20 to 30 minutes before diving into them. Enjoy! :) :)
