Introduction: Chocolate Chip Cannolis

What’s better to make than Cannolis. They are an all time classic and something that will bring joy to many faces. This was a work and progress, it has definitely had it challenges, but I like to say it also had some positive results in the end. Enough of my rambling here is the recipe:)))

Supplies

Tools:
•food processor
•a few large bowls
•pot
•drainer
•rubber spoon
•rolling pin
•knife
•cannoli forms
•easy access to a fridge and a oven stove top

Ingredients:
•two eggs
•all purpose flour
•granulated sugar
•powered sugar
•salt
•ricotta milk
•chocolate chips
•cinnamon
•non stick spray

Step 1: Making the Filling:

Firstly you will need to grab you ricotta milk and drain it. Evenly spread it on a drainer, make sure it is over a bowl to let the liquid seep out. Put in the fridge for 6 to 8 hours. Once the time is up take the ricotta out and put it in to a large bowl. Mix for a little bit with a large rubber spoon. Then you can add in the chocolate chips. *Base the amount to your liking. Add one tablespoon of cinnamon and mix all the ingredients together. Now add the filling into a piping bag and leave to the side until time to use it.

Step 2: Making the Dough for the Cannoli Shell:

Start off by grabbing your food processor and plugging it in. Add your dry ingredients to the mixer. So your flour, granulated sugar and salt. Mix. Then get you butter, that should be at room temperature and add it in to the dry ingredients. Pulse the butter into it. Then add the egg. Mix again. Once done take the dough and lay on a floured surface. Roll it out either the rolling pin, make it thin. After you finished cut out circular shapes.

Step 3: Final Step| Frying the Cannoli Shells and Filling Them

Now that you have circular cut outs of the dough,you will need to get your cannoli forms in hand. Spray the cannoli forms with the non stick spray. Then roll the dough around it. Glaze them with egg whites. Make sure you oven top is on medium heat with a pot filled with the canola oil. Let it heat up while you continue to wrap the dough around the cannoli forms. Now once the pot is ready, grab your cannoli shells with tongs and submerge into the pot. Wait 7-15 seconds and remove. Place on to a plate with paper towels. Repeat if needed. Do the rest of the shells the same way you did it before. Then remove the metal forms and let shells cool off. Now time to fill them. Grab your piping bag and fill the shells. For final touches you can add powered sugar on top of them if you would like.
