Introduction: Chocolate Raspberry Hearts

In this instructable I will show you how to make chocolate raspberry hearts. They are heart shaped chocolates with a delicious raspberry mousse filling. I love how I can customise them in many different ways. Like for example, you could change the filling or use different chocolate or even change the shape of them! There are so many variations of this recipe you could make!

Step 1: The Ingredients for the Heart Shell

Ingredients:

200g of chocolate (you can use your favourite chocolate)

25g of white chocolate (for decoration)

Special equipment:

silicon heart mould

Step 2: Making the Hearts

Method:

Before you melt the chocolate, I would recommend putting the heart mould into the freezer to cool otherwise you might find shaping the chocolate difficult because the chocolate might not set quickly enough and it won't stick to the sides of the mould.

Break up the 200g of chocolate and put it into a small pot place the pot above a larger pot of boiling water.(you can use a microwave to melt your chocolate) Do not let any water get into your chocolate otherwise your chocolate will thicken. Once the chocolate has melted, leave it to cool for about 5 minutes.

After the chocolate has cooled slightly, use the back of a teaspoon to spread the chocolate into the mould. Make sure the chocolate is spread evenly and not too thinly because it could break off whilst you are trying to take it out of the mould. After you have shaped the chocolate put the mould in the freezer for 8-10 minutes or until solid.

If the chocolate layer is too thin or if a part chips off slightly you can add some more chocolate to the mould and put the chocolate shell in the freezer again.

For decoration, I use melted white chocolate. When I do this, I use a cocktail stick and dip it into the white chocolate and make a pattern around the outside of the chocolate shell. Make sure the white chocolate has been slightly cooled before because it will melt the shell of the heart if it is too warm.

Step 3: The Ingredients for the Chocolate Mousse Filling

Ingredients:

150ml of fresh whipping cream

100g melted chocolate

Special equipment:
Electric mixing bowl

Step 4: Making the Chocolate Filling

Method:

Mix the whipping cream in an electric mixing bowl until it is firm. Make sure you do not mix your whipping cream for too long because it will become too solid. Once your whipping cream is firm, add the melted chocolate to the whipping cream and stir it until it is completely combined.

Step 5: The Finishing Touches

spoon the filling into the chocolate hearts and add a garnish of your choice. I used raspberries to put on top of the hearts with some chocolate shavings and dusted them with icing sugar.
