Introduction: Chunky Monkey Bundt Cake With Reese's Fudge Tunnel & Ganache

Who doesn't love banana cake? Who doesn't love Reese's pieces? Who doesn't love Chocolate Ganache?

Well this Bundt cake has all of the above!...

Moist and delicious, this cake has crunchy peanuts inside with a Reese's fudge center topped, with Reese's Ganache!

Step 1: Ingredients

Here's what you'll need:

3 over ripe bananas

1 cup oil

4 lg eggs

1 1/2 cup sugar

3 1/2 cup flour

2 tsp baking powder

2 cup yogourt

2 tsp baking soda

1/4 cup salted roasted peanuts

Fudge

1 cup Reese's Chocolate PB Spread

1 orange zested

4 tbsp. flour

1 lg egg

Step 2: Prepping Bundt Pan

I happen to have a fancy Bundt pan but, any pan will do really...

Spray the pan, if you don't and it has designs it will stick.

1 10cup cake pan

spray or shortening

flour

Spray and flour the cake pan.

Tap and shake any excess flour out, set aside.

Preheat the oven to 350F

Step 3: Cake Mix

*Break eggs separately into a small ramekin...this is to prevent shell from dropping into the batter.

If it does chip into this small ramekin, use half of the shell, dip it into the eggs and it pulls the chip towards the shell making it easier to grab.*

1. Blend bananas, eggs, oil and sugar together

2. Stir the yogourt and baking soda together. ( this will expand so place in a larger container)

3. Sift the flour and baking powder into the bowl, alternating with the yogourt mixture while blending on low speed.

5. Fold in the peanuts when all is mixed;

6. Pour and scrape the cake mixture into the cake pan.

Step 4: Reese's Fudge Center

Fudge
1 cup Reese's Chocolate PB Spread

1 orange zested

4 tbsp. flour

1 lg egg

Using the same bowl, no need to wash.

Add the ingredients and blend to mix.

Spoon on top in a circle around the center....it will magically sink.

Step 5: Bake & Decorate

Bake in a preheated 350F for 80 min or until an inserted wooden skewer comes out clean.

*Do not put the skewer through the fudge center*

Cool for 10min and run a knife around the edges of the pan to loosen the cake.

Cool completely and unmold.

Pour the ganache over the cooled cake.

Reese's Pieces Ganache

1 cup Reese's Chocolate PB Spread
1/2 cup canned coconut milk

Whisk the ingredients together and pour over cake.

Leave aside 1/4 cup for extra drizzling.
