Banana pancakes are the best, unless your making them Celiac safe (Spouse is Celiac). Gluten free banana pancakes recipe as found on many websites including Instructables are as follows 2 bananas 2 eggs, these burn easy and are flat and wet not fun. So to science a better option.

Supplies

2 ripe bananas (ripe enough the kids wont eat but not goo yet ether)

2 eggs

1/2 C ~125ml gluten free flour (we use Americas test kitchen recipe)

2T ~30ml vegetable oil

1T ~15ml Baking powder

a greased pan or griddle on medium low heat

somthing to mix in.

Step 1: Make the Batter.

If you looked at the written recipe you may have seen that there were ingredients removed and amounts changed in different colors inks. This is to help identify different stages of the process. Eventually a combination that rose, moist but not goopy and less likely to burn. (The 3erd picture is of the GF flour I was using whole grain, which is delicious)
Mush the bananas, eggs and oil together try to get the big lumps out.
Mix in the GF flour and baking powder.
A thick spoon able batter will result.

Step 2: Fry Them Up

Set your griddle or pan to medium low heat. Dollop a big spoon of batter onto the greased griddle. Cook until bubbles stay, flip and finish cooking the cakes they will be slightly darker then normal pancakes because of the sugar caramelizing in the bananas.

Step 3: Devour, Alternative Versions.

Once the cillycakes are done smear them with chocolate hazel nut spread and eat.

Serving with a topping of fresh berries is a delishous way to pretend this is healthy.
Using whole grain flour is my favorite way to make them.
Adding diced strawberries to the batter is epic.
