Introduction: Circus Animal Cookies
I use to love Circus Animal Cookies growing up. For this recipe, I purchased two different brands of candy coating: Wilton’s and Mercken’s. The Wilton’s I was able to microwave. The Mercken’s did not microwave well so I ended up placing the candy coating in a double boiler and added a small amount of coconut oil. This recipe can also be found at gardengirlrecipes.com.

Ingredients
1 stick unsalted butter, softened (4 ounces)
6 tbsp powdered sugar (1.5 ounces)
1 cup all-purpose flour (125 grams)
½ tsp baking powder
8 ounces pink candy melts
8 ounces white candy melts
coconut oil (optional)
rainbow nonpareils
Step 1: Combine Butter and Sugar
reheat the oven to 325F. In the bowl of a stand mixer, combine the sugar and the powdered sugar with a paddle attachment until fluffy.
Step 2: Add Flour and Baking Powder
Add the flour and baking powder.
Step 3: Shape Dough
Shape the dough into a ball with your hands.
Step 4: Roll and Cut Dough
Roll the dough to ⅛-inch, cut the cookies with your animal shape cutters, and place them on a baking sheet lines with parchment paper.
Step 5: Bake
Bake the cookies until lightly browned, about 10 minutes. Let cool.
Step 6: Melt Candy Coating
Heat the candy coating in a double boiler or the microwave, depending on the brand you purchase.
Step 7: Dip and Sprinkle Cookies
Dip the cookies in the candy coating and sprinkle some rainbow nonpareils on top.

Thank you thank you thank you! I loved circus animal cookies as a child but you can't get them in the U.K. without paying an absolute fortune (seriously, I saw them being sold for about £30 a bag at one point!). I will definitely be trying these! :)

OMG you have solved my lifelong dilemma! I've always loved circus animal cookies, but only the white ones because the pink taste weird (I think it's the dye). Now I can make my own but only in one color!
