Introduction: Coconut Sticky Rice With Mango

Coconut Sticky rice with mango is a traditional thai dish that is perfect for a warm summer day. Easy to make, delicious, cheep, coconut rice is a must have. And with ripe mangos it's an even better treat!

Step 1: The Recipe

First things first is to get your ingredients.

You will need:

1 cup of water

1 can of Goya Coconut Milk

1 cup of any kind of sticky rice (I used Jasmine)

1 ripe mango

1/2 a cup of sugar

Step 2: Making the Mixture

To start making the rice, pour a cup of water, a can of coconut milk, and 1/2 a cup of sugar into any saucepan. Wait until the mixture boils.

Step 3: The Rice

Next up get your cup of sticky rice. Any kind of sticky rice will work for the recipe. When cooking the sticky rice, follow the directions on the back of the bag as how to prepare it, substituting half of the water for the coconut milk. I used jasmine rice, which usually boils in 15 minutes.

Step 4: Now We Wait

Once the water and coconut milk is boiling, add in the rice, turn down the heat to low, and let it sit for 15 minutes or until the water has evaporated.

Step 5: The Sticky Rice

After fifteen minutes, the sticky rice is ready to go! It absorbed all of the yummy sugar and coconut water so if you want the rice can be eaten like this.

Step 6: Extra Sweetness

If you want you mixture to be a little sweater, add in a tablespoon of sweetened condensed milk and half a cup of sugar. This is not required, but gives it a little kick.

Step 7: The Finished Product

Once you add in your mangos, the dish is finished! Enjoy with some black tea with the condensed milk for a real Sticky Rice experience!
