Introduction: Coffee Cup Cakes

I've been looking for a recipe for a single-serving cake for a while, and I discovered a variation of this recipe while browsing on Facebook! I found it to be very quick and easy to prepare, using ingredients that most of us have on hand at home. There is no extensive baking required, and the ingredients for this cake could stay fresh or months if refrigerated!

Simply take Angel Food cake, along with any flavor of your choosing, mix together, microwave, and decorate! The cake may be prepared in less than ten minutes, or it may be refrigerated to prepare later. When I attempted this for the first time, it came out very well, and just enough cake for a single serving.

Step 1: The Main Ingredients

Begin by gathering the ingredients that you will need. These include...

  • 1 16oz box of Betty Crocker Angel Food Cake mix
  • 1 16ox box of Betty Crocker SuperMoist White Cake mix (may substitute any SuperMoist flavor of your choice)
  • Frosting
  • Toppings (sprinkles, fruit, candy, ice cream, etc.)
  • Whisk
  • Water
  • Large mixing bowl
  • Large coffee mug
  • Spatula or spoon
  • Container(s) with a lid
  • Measuring cups

Step 2: Mixin' It Up

Open boxes of Angel Food Cake mix and SuperMoist White Cake mix. Empty the entire contents of each box into the large mixing bowl. Use the whisk to gently stir the contents until they are completed mixed together.

Note: Do not use a power mixer for this step, as it may result in the contents being thrown out of the bowl.

Step 3: Contain Yourself

Once the contents have been mixed together in the mixing bowl, empty the contents of the bowl out into the container. Seal the container tightly with the lid to prevent any air from penetrating the mixture.

Depending on the size of the container you select, you may need more than one to hold the entirety of the mixture.

Once the container is sealed, give it 2 to 3 more shakes to ensure that the contents are completely mixed together.

Step 4: Stay Cool

Store the mixture in a safe, secure place, such as the refrigerator. Leave mixture in the refrigerator until you are ready to have some dessert! The mixture will safely last until the expiration date printed on the original cake mix boxes if kept in the refrigerator.

This step may be omitted if you are going to prepare and eat the cake immediately after preparing the mixture. However, you should still store any unused mixture in the refrigerator, to prevent it from spoiling.

Step 5: Mixed Measures

When you are ready to prepare the cake, remove the mixture from the refrigerator and gather your coffee mug. Open the container and measure out 3 tablespoons of the mixture. Dump those 3 tablespoons into the coffee mug.

After scooping out the 3 tablespoons, place the mixture back in the refrigerator to keep it fresh.

Step 6: Just Add Water

Measure out 2 tablespoons of water, and dump into the coffee cup. Use the spoon to mix the contents together thoroughly, until it roughly matches the provided image.

Step 7: The Microwave Effect

Microwave the mixture on high for one minute. This allows for the cake to bake much faster than if you were using a traditional oven.

Step 8: Too Hot to Handle

Remove the mug from the microwave after cooking is done.

**CUP WILL BE HOT AFTER MICROWAVING. Use a protective glove when removing from microwave, and allow cup to sit for 1 to 2 minutes, until cooled.

Step 9: Topping It Off

Decorate the mixture with whipped cream, frosting, fruit, candy, chocolate, or any other topping of your choosing.
